Freekeh anyone?

Recent nutrition action letter included freekeh as a healthy grain, good source of protein and fiber. It's apparently cracked and roasted green wheat.

I've never heard of it. Anyone try it? If so, how is it?

It is lovely! I got the cracked.....easier to cook. Use just like barley and farro. Can saute mushrooms and onion etc and make like a risotto. It is really delicious. My son made a
"mac and cheese" side at his restaurant for the customers using the freekah instead...it was a hit ! Similar to Israeli couscous and bulghur. c

It is smoked green wheat - there are cool videos of it being made on youtube. I like it but I think it took me a couple of attempts to get a recipe I enjoyed. Time for a visit to the bowels of my freezer....
