Canning Enchilada Sauce

I'm fairly new to canning. I have several books on canning and have made fruit jams for the last 4 years. I was lucky enough to try Annie's Salsa recipe this summer. I make a no tomato enchilada sauce. I use dry chile pods that have been soaked and cleaned and blended up with garlic and salt. Sometimes instead of water I use chicken stock. That's basically it. Since it doesn't have tomato, can I can this?
