Comments (10)Ken - A comment on canners and racks - if I may - Be sure to check water bath canners to see if they are tall enough for quart sized jars. They are making shorter ones now - that work better for pints. The shorter ones will not allow a full 2 inches of water over the top of the jars once filled, especially if it has a rack that lifts off the bottom. Also - in the case of choices in racks - I have very hard water and went looking for a stainless steel rack as a rust inhibitor. I did find one, however, the wire configuration is such that it lets smaller jars tip over. It would be best if they made them with concentric circles - as some are. These will hold small jars upright and prevent tipping. Sometimes these little annoyances can be irksome when you've got a big pot of boiling water to contend with. Just my 2 c's. Comments (5)I plan on merinading them in a sauce that is mainly ketchup and soy sauce, then bake them for about 30 min. I like to do as many things ahead as possible, and I would rather not have the bacon smell in the house that night. I have had frozen left over Chow Mein and if I remember right the water chesnuts were still crisp. Comments (8)Your cauliflower looks delicious. I would test your brie like mentioned. It does work but the variety will do tell. Not often a 'topping' melting cheese. I have gently taken the rind 'top' off of a small very thick wheel...but gave it a crust of fluffy shaved parm and gruyere tossed with some panko and a bit of avocado oil, then under the broiler to toast and bubble...an app. With chrisp veggies. (test on a toasted baguette slice). Some do just ok, some run like a river quickly. I agree a brie sauce can be very good...but would not choose it over other good 'sauce' cheeses. (i think of the rind as an ugly one). One rind that has absolutely no flavor and such an odd texture. We had a wheel of brie at work today...and an outstanding swiss. Comments (10)Agreed with Gardengal. Saturated with oil is better than spray, though. :) I highly revommend Fillo Factory brand dough. There are some brands that come shattered and stuck together, and take some expertise to rescue. We always freeze them in toaster oven sized foil trays, sometimes sold as grill liners, (reusable!), filled then wrapped in freezer paper. Alternatively, on heavy cardboard (or plywood skin), board wrapped in parchment or freezer paper., then filled wrapped in freezer paper. The foil trays hold six large or eight small, and have the advantage that they pop right into the oven or toaster oven to reheat,. If you need to pile them in a container (not ideal), freeze them in a single layer first (even if you have to do batches), and lay them flat wirh parchment between layers. When you first bake them, try to get them to fully baked, firm and crisp but just the first hair of browning. Reheat for the same amount of time as the original bake, or until the corners start to brown....See Moremsafirstein
