Want to make zucchini lasagna and sub...

Want to make zucchini lasagna and use/sub sour cream for the riccotta/cottage cheese.

Here's what I have and need to use up. Lots of zukes, maybe 4 or 5 lbs. 1/2 lb shredded mozz. Need to use one lb. of sour cream. Just bought broccoli, red pepper and have onions, red and yellow and garlic. I have a pretty well stocked pantry and fridge as of the moment. oh, and cauliflower and cans of tomato products.
I don't really want to stand over the cooktop and saute floured zukes, if I can help it. Oven roasting will be fine or thinner raw sliced zukes.
I'd prefer something without meat to make for a not strict vegetarian neighbor. Dairy will be ok, I suppose. Neighbor did say that they do, on occasion, eat meat. Extra casseroles will be a bonus.

I have ground sirloin in the freezer and also several several chicken sausages with spinach and feta and chicken sausage with apple. And several apples in fridge.

Anyone have any recipes, esp with sour cream? Thanks much.
