veal cutlet ideas?

It seems that any time I go to buy veal cutlets, scaloppini, or whatever you want to call it, they're either not cut to my liking or out of my price range. They're on sale this week, so when they were once again not like I wanted I asked if I could buy a whole roast so I could portion it out myself. They obliged, and now I've got about six pounds of leg to slice, freeze, and use in the next couple months.

Saltimbocca (which is why I wanted a few cutlets in the first place), francaise, piccata, parm, and Schnitzel, are the obvious choices that first come to mind. I'm happy with my fairly standard recipes for those but would welcome any special variations. But really I'm looking for more interesting ideas.

Anyone?
