| Oh dear....I did it. Scrotched my raspberry jam. Got it into another pan quickly but I think I can taste some "scortch", hubby says he can't. I'm wondering if adding some apple sauce or lemon juice would help cover that taste so I don' loose this big kettle full? |

| I shouldn't laugh....but it is sort of funny seeing this right above the one for a candy thermometer!! Speaking from experience? just jar it up....anything you can do won't make it appreciably better....and may make it worse. Chances are that most others won't notice...just call it caramel raspberry.... |

| I agree, if your hubs doesn't taste it, jar it up. If nothing else you can use it as a base for glaze when you BBQ. I've caramelized my fair share of jam, so I sympathize. Mine usually gets so rubbery that I can't use it for anything when I do that. Annie |
