This is an excellent food course!

I've been studying the Dutch Masters and veritas symbols since April. That led me to an interest in how the world's food cultures developed. I've already taken 20 of the Great Courses so I headed over to see what they might have available. This course is on sale (every course goes on sale once/year). It's fantastic. I don't know where else you can get this kind of education so inexpensive, so convenient, and so well done. It's 36 - 30 min. lectures. Thought I'd share...

Oh, yes, John...remind SWAMBO that you'd like the DVDs (with the books...they are $35 additional but you'll want to go back over the course). You'd miss the cooking demonstrations and the fantastic visuals on the CDs...not good. I'm going to be sad when I've finished this series. I've loved all of these courses but this one is just FANTASTIC!

I am baffled because I have the opposite point of view entirely. Has anyone ever thought about what your ancestor Gunter in Germany was eating a thousand years ago? Probably cabbage, cabbage, cabbage, onions, garlic, barley, cabbage, pork, and turnips. How about Earnest in England?... pretty much the same. Far from food going extinct, I think there is tremendous diversity now in food production. Industrial production might require GM and capitalization of research through protection of intellectual property, but the fact remains that you are eating tomatoes, kohlrabi, six kinds of lettuce, two kinds of carrots, brussels sprouts, etc. All of those are robust and are grown as millions of mini varieties in gardens all over the world. I mean EVERYWHERE. Seed banks, seed companies, and people's dresser drawers hold huge stores of DNA, all slightly different. In five minutes, I could buy 100 different packets of seeds at the hardware store. Was that even possible in the 50s? And that is F1 or F2. Some okra farmer in Alabama has seeds produced through 50 crosses. People can and do create and study their own cultivars of darn near everything every season and then trade them internationally. How will that change? Activism is all well and good, but GM and Mxxxxxxo are small in the big picture and probably getting smaller. Remember that they have to invest millions in a cultivar just to get it to a commercial seed stage. How many cultivars can they do that with? And they and their timing are going to be wrong how often? Monsanto is not a juggernaut, it is a riverboat gambler. The bigger it gets, the bigger it bets. For better or worse, some gardener in China has a seed that is better than what Mxxxxxxo has got, and it is only a matter of time before the rest of the world finds out about it. In Japan, a single pumpkin seed can sell for hundreds of dollars. Mxxxxxxo has not moved in on that action, and it never will. The market is fuelled by enthusiasts and connisseurs. If the market gets cornered, people will immediately lose interest. Viewed in terms of sheer greed, it is in Mxxxxxxo's interest to maintain wild type specimens in environments all over the world. Even if Mxxxxxxo could sell one type of tomato seed that would make all others extinct, it would not do it. Has anyone considered that? Well, I guess that is enough. I could give 20 more examples. Viewed from a wider perspective, food diversity has never been better. And I will not be buying Mxxxxxxo stock. I should watch more TV, it sounds very entertaining.

Here ya go Florey! It was on page 4 I believe. While I'm at it I'll post my vegetarian recipe for chili. It's easily made with meat by starting with browning ground meat or other meat then going from there with this recipe. Saute about 3 cups each of onion, celery and peppers of your choice and two Tablespoons or more of garlic[ I use about 3 or 4 for this amount, smiles]. When these are sauteed a bit, add two cups of carrots and 2 large cans of small diced tomatoes [with their juice]. I don't like to use crushed or sauce in my chili. I think it overwhelms the veggies. A bay leaf and couple tablespoons each of cumin, chili powder, and salt. Add water or veggie stock, if needed, to bring level up to slightly above veggies. As hard veggies begin to soften, add 2 cups each of eggplant[cubed], zucchini and/or yellow squash. Cook another ten minutes and add 2 cups each mushrooms, canned or frozen corn and canned or frozen green beans. Taste now for salt and seasonings and adjust. Next add as many beans as you like. I use the liquid in the beans too. At least 1 lrg can of dark and 1 lrg can of light kidney beans. Also, black beans and cannellini beans are good. Pintos are great too, naturally. As soon as beans are heated through the chili is done. Taste once more for seasoning. Like all chili this is best if made the day before. Does great frozen. I usually make about 3 gallons of this at a time and freeze in 4 or 5 containers.

Sounds like it will be a great evening. I'm sure the chef will be thrilled! This is very nice and can be made ahead of time as well. The Tannery’s Crab Crème Brûlée with Pickled Cucumber and Melba Toast adapted from Paul Flynn via The Afternoon Show and Paul Flynn: Irish Food Serves 4 as a starter “Any time you have something creamy, you need something sharp to offset it. This is why we serve pickled cucumber with this dish. You need something to cut through the cream, and the pickled ginger is the starting point of that,” says Paul Flynn. One of the keys to this dish is its lovely creamy consistency, so keep an eye on your oven temperature: “You put it into a low oven because you don’t want the eggs to soufflé, you want them to gently set, like a custard.” 400 ml (1 3/4 cups) cream 1 egg 2 egg yolks 1 garlic clove, peeled and finely chopped (or grate it directly into the custard mixture with a Microplane grater) 2 tablespoons pickled ginger, drained and finely chopped salt and freshly ground black pepper 150 g (1 cup) picked white crab meat, finely chopped 50 g (1/2 cup) freshly grated Parmesan pickled cucumber, to serve (see recipe below) Melba toast, to serve (see recipe below) lemon wedges, to serve Place the cream in a bowl with the eggs, garlic, pickled ginger and some salt and pepper and mix well. Add in the crab meat, ensuring there is no shell, and mix well again. Cover with cling film and place in the fridge to allow the flavours to infuse for at least 30 minutes, but ideally up to overnight. Preheat the oven to 150°C (300°F). Ladle or pour the mixture into the ramekins, making sure you get an even amount of crab in every ramekin, as the crab tends to fall to the bottom. Place the ramekins in a roasting tray. Fill the tray with warm water until the water comes halfway up the sides of the ramekins. Place this bain marie in the oven and cook for 45 to 60 minutes (check after 40 minutes). When cooked through, the mixture should be set but still have a slightly wobbly consistency. Remove the ramekins from the bain marie and allow to cool ��" the crab crème brûlée should be served at room temperature. When ready to serve, sprinkle a very thin layer of Parmesan on top of each ramekin and brown under the grill. Serve with pickled cucumber, really thin Melba toast (“sort of a retro addition that you don’t see very often”) and a lemon wedge. “So there you have it,” says Paul. “The Tannery crab crème brûlée ��" my classic.” Pickled Cucumber 1 cucumber pinch of salt 50 g (1/4 cup) caster sugar 50 ml (1/4 cup) white wine vinegar 1 teaspoon sweet chilli sauce Slice the cucumber as thinly as you can (a mandolin or food processor’s slicing attachment is perfect for this job). Place the sliced cucumber in a bowl and sprinkle with a little salt. Set aside. Bring the sugar, vinegar and chilli sauce to the boil and reduce for 30 seconds. Take off the heat and allow to cool completely. Once it’s cool, pour the liquid over the cucumbers and stir gently to coat them all. This will keep in the fridge for 2 or 3 days ��" any more and the cucumber loses its colour. Melba Toast Toast slices of white bread and remove the crusts. Slice the bread laterally to make two slices that are half the original thickness of the bread. Rub off excess bread from the untoasted side, then cut diagonally into triangles. Interesting thoughts -- we could all improve on paperwork storage in our homes. Two things I think I'm doing well that differ from the above mentioned Script, and someone else might find some ideas in my methods: Taxes. Yes, like Script, I am scrupulous about maintaining records for my taxes. About a dozen years ago I went to the office supply and bought two big boxes of BRIGHT GREEN folders (green like money). I labeled them Taxes 2000 ... Taxes 2001 ... Taxes 2002 ... Taxes 2003 ... and so on. Given my family's typical lifespan, I made enough green folders to take me to age 110 -- probably more than I'll need, but I'm ready! They're all stored in my file cabinet, taking up very little space. Now when I receive anything tax-related -- a charitable receipt, an end-of-the-year bank statement, whatever -- I have a place to file it. In April, I have a place to file a copy of my taxes, and I can go back and see previous tax years. For the rest of my life, this system is in place. Death folder. Ours is a notebook. Two identical notebooks, actually, since we have two children. Our girls are young adults now, but they've never dealt with an estate -- even if they don't open it 'til they're old, it'll be useful to them. It contains a lot of stuff: - A personal letter to the two of them - A list of our wishes about funeral and items we'd like donated to various family members or charities - A list of things they must do immediately; it starts with going to our house and taking possession of the dog, but it also includes small details like canceling our voting registration and destroying any medicines in the house. At every turn this list includes addresses and phone numbers, including the lawyer we suggest for probate, the funeral home our family's always used, and family members who should be contacted. - A copy our will; they know what's in it -- everything split between the two of them - A list of our financial assets -- bank accounts, investments, insurance, deeds/maps of real estate ... when our youngest became a legal adult, we made the two girls co-beneficiaries of every account; note that this was done before either was married, so our two kids -- not future son-in-laws -- will own these items. - A list of the bills we pay each month -- electricity, phone, even the guy who cuts our grass. - Official copies of our birth certificates, our marriage certificates, and the girls' birth certificates -- they might not be needed, but the girls won't have to scramble to find them - A flashdrive with all of the above in digital format plus photographs that might be useful in putting together the funeral Our rule: We keep two years of tax returns in the notebooks ... the reason being that someday an accountant will file our final estate tax return, and he or she will want our last two years of returns -- so every April we pull out the notebook, discard one old return and insert the newest ... so our rule is that every April we look over the notebook and update anything that's changed. For example, last year we changed bank accounts, and someday we hope to add items concerning grandchildren to the book. Our girls know that the notebooks are stored in the safe, and they know where the key to the safe is hidden, and they know it's labeled with a misleading name so that a thief wouldn't look at it twice. Last thought on this notebook: Though this project took us the better part of a year --- we kept remembering one more thing, one more thing that really should be included -- we didn't find it difficult emotionally. I suspect that if we were older and/or one of us were in poor health, it might've been different.

Well, the Harvard class is certainly not free. I would have to drive for 2 hours each way, pay for gas, Boston parking and have to be there on their time schedule; but, mostly, it's not even remotely the same subject matter. So, I don't see a comparison?

Did you read the subject matter of class offering I linked?

I'm intrigued. I'll be traveling soon and am thinking of downloading the course to my iPad. Would you recommend I purchase the DVD's w/ books instead? Think I'd really miss having them if I just have the streaming video?

This Food course is the 21st series of lectures I've enjoyed from the Great Courses. They are taught by the best professors in the country in their fields. I could never afford to take one class in person from these professors even if I could somehow get myself to the various universities. Read a few of the bios of the professors and you'll see what I mean.

Because the courses are so packed with dynamic info, I find myself regularly going back to them for something I've forgotten or want a refresher. For instance, I have completed the History of the U.S...the course is 84 - 30 minute lessons...not something you just listen to over a rainy weekend. Sometimes, a topic comes up and it was 14 lessons ago and I want to go back and review what was presented. It's so much easier to go to the class transcripts that contain the lecture's bullet points rather than find the exacts spot within 84 lessons on DVD. I also like to refer to the additional reading suggested by the professor contained in the transcript book. The books (softcover) also contains a glossary that I find useful.

There is a lifetime guarantee on these courses. If you don't like one or you drive over a CD with the lawnmower give them a call and you'll get a refund or a replacement. So, basically, risk-free to you.

The transcript books are $35 for each course additional. I think you would regret not having them.

Where are you travelling to? For vacation or work?

The Harvard courses are on-line, and are free. No, you do not have to drive there.

No, they are not on the same topic, but they are about food, a very unique development of food culture in the history of cooking.

tricia, I'm headed to Denmark to finally wrap my arms around my new granddaughter born in August - so grateful for Skype! There are no direct flights and I thought this course would be both entertaining and a good use of time during long layovers.
