Best Way To Clarify Stock Or Broth?

John Liu

I have a question about clarifying stocks and broths. Actually, two questions.

The first question is, do you lose any flavor by clarifying a broth?

- If you do, can you compensate by reducing the broth a little more?

The second question is, what is the most efficient way to clarify a couple gallons of broth?

- The straining, skimming, and egg-meat raft process seems tedious.

- It seems like you should be able to use purely mechanical filtration, but every time I try with coffee filters etc, the filters are quickly clogged up.

- I have read of a freezing technique, in which you freeze your broth, then move it to the refrigerator and let it defrost in a strainer. I've not tried it.
