Quick barley question - help please!

I'm making a beef barley stew tonight, using a CI recipe for Irish stew but subbing barley for the potatoes. The recipe says it serves 6-8, and I'm serving 6 adults, and I've got a bit more meat than the recipe calls for. (4.3 lb chuck roast, untrimmed, vs the 3-3.5 the recipe calls for.)

I bought Bob's Red Mill Pearl Barley, and basic cooking instructions say 1 cup barley, 3 cups water, simmer for an hour. The stew calls for 3 cups of liquid - chicken stock and beer. I'm thinking bump up the liquid and add a cup of barley, and that should be enough barley "filler." Sound about right?

I don't want the stew too dry, so bump up the liquid 50%? Double? What would you do?

(I think I've cooked barley about once in my life, hence the question.)
