Stuffed Pork Tenderloin Posted by cookingrvc (Sue) 2 pork tenderloins 1 c fresh spinach, rinsed & drained 1 c grated Jarlsberg cheese you could sub another cheese 1/3 c grated parmesan 2 tsp garlic powder Salt & pepper 2 c white wine or chicken stock 2 T flour 2 T cold water Chicken stock Preheat oven to 400F Butterfly each tenderloin and carefully pound to even thickness. Place on work surface, overlapping the long sides by about an inch. Layer the spinach leaves, jarlsberg & parmesan on top of the meat. Sprinkle with garlic powder, salt & pepper. roll tightly and tie off at 1-1/ 2 inch intervals. Place in roasting pan and add 2 cups of wine or chicken stock. Roast uncovered 1-1/2 hours or until internal temp reaches 160F. Remove from oven, transfer to a cutting board and loosely tent with foil, let sit for 15 minutes. Drain liquids into saucepan and reduce over medium-high heat for 2 minutes. Make a slurry of flour and water, then slowly whisk into saucepan to make gravy. Maple-Chili Glazed Pork Medallions 1 teaspoon chili powder 1/2 teaspoon salt 1/8 teaspoon ground chipotle pepper 1 pound pork tenderloin, trimmed and cut crosswise into 1-inch-thick medallions 2 teaspoons canola oil 1/4 cup apple cider 1 tablespoon maple syrup 1 teaspoon cider vinegar 1. Mix chili powder, salt and ground chipotle in a small bowl. Sprinkle over both sides of pork. 2. Heat oil in a large skillet over medium-high heat. Add the pork and cook until golden, 1 to 2 minutes per side. Add cider, syrup and vinegar to the pan. Bring to a boil, scraping up any browned bits. Reduce the heat to medium and cook, turning the pork occasionally to coat, until the sauce is reduced to a thick glaze, 1 to 3 minutes. Serve the pork drizzled with the glaze. Pork Tenderloin With Bourbon Sauce INGREDIENTS: * 1/4 cup Kentucky Bourbon * 1/4 cup light soy sauce * 1/4 cup packed brown sugar * 2 large cloves garlic, chopped * 1/4 cup Dijon mustard * 1/2 teaspoon ground ginger, or 1 teaspoon finely minced fresh ginger * 2 teaspoons Worcestershire sauce * 1/4 cup vegetable oil * dash hot sauce * 2 pork tenderloins, about 1 1/2 to 2 pounds PREPARATION: In blender or food processor, combine bourbon, soy sauce, brown sugar, garlic, mustard, ginger, Worcestershire sauce, hot sauce, and oil; pulse until smooth. Place tenderloin and marinade in a food storage bag; refrigerator for 4 hours or overnight. Cook 4 inches from a hot charcoal fire for 15 to 25 minutes or until the pork has reached 165° internally and is no longer pink in the center. Baste occasionally while cooking. This recipe is quick, easy and very tasty. The sauce is great on mashed potatoes, too. You might want to adjust for only two chops, or you may not...the sauce is that good! Sherried Mushroom Pork Chops Butter flavored cooking oil spray 1 clove garlic, pressed 6 lean center cut pork loin chops (may be boneless or bone in) Salt and pepper to taste 1 - 8 ounce can sliced mushrooms, drained (I use fresh) 1 cup dry sherry 1 - 10.5 ounce can fat-free beef broth 2 tablespoons cornstarch 2 tablespoons water Preheat the oven to 350 degrees F (175 degrees C). Spray a large nonstick skillet with cooking oil spray and heat over medium heat. Add garlic, and saut� until fragrant. Season pork chops with salt and pepper, then cook them in the skillet just until browned on both sides, about 3 minutes per side. Remove the pork chops to a baking dish. Pour the mushrooms into the skillet with the pork garlic, and stir in the sherry and beef broth, scraping any bits of pork that are stuck to the pan. Bring to a boil, then pour over the pork chops in the baking dish. Cover with a lid, or aluminum foil. Bake for 45 minutes in the preheated oven, then remove the lid or foil, and continue to bake for another 15 minutes. Remove the chops from the pan to a serving platter, and place the dish on the stove over medium heat. Stir together the cornstarch and water. When the juices in the pan come to a boil, slowly stir in the cornstarch mixture and cook until thickened, about 2 minutes. Spoon sauce over the chops, and serve. I love fresh cranberries, although I am not crazy about cranberry relish. I like it OK, but it is not my favorite cranberry dish by far. I love them in pies, muffins, cakes, etc. It's too bad that most folks only know cranberries for the one time opening of the can at Thanksgiving. I hope I can make some more things with them this winter for the holidays. Here's one I made for Thanksgiving that was a big hit. I had to laugh Jennifer, because my experience was similar, we ended up going for seconds and licking the bowls! Cranberry-Cherry Crumble, from "Cooking Light" magazine 3 cups fresh or frozen cranberries, thawed (that's one package) 3 cups frozen pitted dark sweet cherries, thawed (I didn't measure, just used a whole bag) 3/4 cup granulated sugar 1/4 cup dried cranberries 1/4 cup dried cherries (I just used 1/2 cup dried cherries, no dried cranberries. You could probably sub some raisins too, to save money) 1 TBLSP all purpose flour 1 1/2 tsp. cornstarch (I used some tapioca I found in the cupboard instead of cornstarch) Cooking spray (I used olive oil to oil the pan) 1/4 cup slivered almonds, chopped 1/4 cup regular oats 1/4 cup whole wheat flour (I used regular) 1/4 cup packed brown sugar 1/4 tsp. salt 1/8 tsp. ground nutmeg 1/8 tsp. ground cinnamon 1/8 tsp. almond extract (I left this out) 2 TBLSP chilled butter, cut into small pieces Preheat oven to 375 degrees. Combine first seven ingredients in a large bowl, tossing gently to coat fruit. Spoon mixture into an 8 inch square baking dish coated with cooking spray. Combine almonds and the next 7 ing. (thru extract) in a med. bowl. Cut in the butter with a pastry blender until mixture resemles coarse meal. Sprinkle oat mixture evenly over the fruit. Bake at 375 for 45 minutes or until filling is bubbly and topping is golden. Serves 8

Kim, you really should explore the world of seafood, as it is ideal for fast meal prep. The whole secret with cooking shrimp, scallops, and other shellfish is to make sure you don't overcook it. But the particular critter usually gives you a clue. Shrimp turns pink when it's done. Scallops turn opaque. Clams and oysters curl at the edges. The hard ones are calamari and abalone. But even they give you clues. To clean shrimp you need to remove the shells and the mud vein that runs down the back. This can be done before or after cooking, depending on recipes. Hint: Shrimp cooked in their shells are more flavorful. There are special tools for prepping shrimp. But a regular table fork works just as well. Stick one tine into the shell from the head end, pointing into the mud vein. Then push the shrimp onto the tine. The shell and vein will pop right off. Fish does not require a long cooking time in any recipe (the rule of thumb is to cook ten minutes for each inch of thickness).
