Love this stuffing for peppers

This is a stuffing for red or yellow peppers that I especially like.

I use browned sausage, reconstituted dried tomatoes, minced onions, Italian seasoning and drained but not rinsed orzo. The amounts of each are whatever you feel like.

After filling peppers, I top with Italian blend shredded cheese or whatever I have available (sometimes Parmesan). Add tomato sauce to bottom of baking pan and bake about 25 minutes at 350.

I hollow out my sweet peppers after picking and freeze on a baking sheet. So I always have sweet peppers to stuff.

I bet that this smells heavenly, RyseRyse! I really like the ingredient list; particularly, using orzo is something new to me in stuffed peppers.

RyseRyse 2004,

I read your post to DH and asked that he save some whole peppers so we could try out your recipe & he said, "Too late, they are already cut up & in the freezer. We will have to try it next year."

Oh well......I guess I will just thaw some chopped peppers & make a stir-fry.

I'm green with envy (pun intended). The only things producing in the garden are the squash (of course), cucs and black-eyed peas. The hot peppers - Jalapeno and Anaheim type - are the only ones that actually have anything on them. The Calif. Wonders are just sitting there doing absolutely nothing. I couldn't even find a bloom on them last evening. The tomatoes (60+ plants) are nice looking plants, but very, very few tomatoes. They are blooming, but pollination just isn't happening with our hot summer this year. We have had 30+ days of 100F or over, along with dry wind blowing about 30 mph until the first part of July, and no rain. Yep, less than 1" of rain this entire year. The yards are either dead of playing possum (I think they are dead). One of our deep wells only has about 6-8' of water left in it and we have already burned out a pump motor in it this year. We'll be drilling a new well sometime in either Sept. or Oct., whenever our driller can get out here. Grazing is gone, hay is higher than a cat's back, but we're trying to hold on to the last 11 head of cattle since we have those scheduled in our Beefalo breeding program. So, for those of you getting rain, please send us some or issue up some prayers for the all the land in the drought areas. Lilo - I bought a new "yellow" tomato this year named Lemon Boy. I'm growing it in the greenhouse and so far have picked about 5 or 6 tomatoes off it. They are less acidic and DH really likes them.

I have frozen stuffing peppers for several years now. I have done Poblanos and Joe Parkers, the seed of which Larry sent me a couple years ago and which we love. We do it by roasting the peppers on the grill til the skins are uniformly blistered, then popping them into a gallon plastic freezing bag and letting them sweat. When they've cooled we slip the skins off, slice down one side leaving the stem end on, pull out the seeds and membrane from inside, lay them out individually on cookie sheets to freeze, then pack them into freezer bags. The things we like about the Joe Parkers are taste, smoky with just a hint of heat, large size, and ease of peeling. The skin is thick, and after blistering and sweating pulls off easily in one or two large pieces. These are wonderful for chile rellenos. So thanks Larry. I freeze jalapenos too, but just pop them into the freezer raw after deseedingj--with gloves on. I use these later in fresh and canned salsa.

We love stuffed peppers! Like ravencajun, I cut them in half and stuff the halves. If you have really large bell peppers, a stuffed whole one might be too much for a serving anyway! I don't boil mine. I blanch them in the microwave. I can do a whole plate full of pepper halves in about 3 minutes. Then just let them cool and stuff them. I use home made spanish rice as a stuffing (rice, hamburger, onion, tomato sauce, seasoning - I don't really have a recipe) or any spanish rice packaged mix will work too. We just like spanish rice better than any other stuffing we've tasted (meatloaf, some use pasta with hamburger, etc). I have also raised many of my own bell peppers, and when there are a lot of them in the garden, I will make up the stuffed halves in bulk and freeze them on a cookie sheet then store in gallon ziplock bags. They make a quick easy meal that way and are just as tasty as when fresh. Sometimes we top with shredded cheddar cheese (let it melt).

Hi everyone. I ended up in a time crunch & thought it would be quicker to do a one dish meal with the peppers cut up. Boy was I wrong. At least I found out that my farmer pork sausage is not as lean as his ground beef. Since farmer ground meat is frozen immediately, and not thawed prior to my use I'm not worried about safety, and may well use it raw next time. Those were such beautiful poblanos! A real shame I didn't go ahead and stuff them.

A stir fry sounds great, but next year have him also freeze peppers for stuffing. This year mine were very small, so I just halved them, put them on a cookie sheet for freezing and then bagged them.

Does the freezing take care of having to parboil the peppers? Now that would be nice!

I have never parboiled the peppers --- I just stuff them while frozen and bake until tender (about 25 minutes.)

Ryse, Dad used to cut the tops off green peppers, take out the seeds and "stack" them, 4 per package. He liked stuffed peppers and like you, stuffed them frozen, then sauced and baked them.

He used a similar sausage stuffing, but with rice instead of orzo. I loved the stuffing, didn't want the peppers, LOL, now I'm going to have to try again.

With the little peppers, there isn't as much pepper! Also, my son always said he hated sweet peppers because all he ever had were green ones. Now he likes the stuffed peppers but only with yellow, orange, or red ones! Stacking sounds good - I do that with the large peppers but just cut them in half and stack them instead of using whole peppers for stuffing.
