Handmade Bagels...............

As opposed to kneading the dough in the Magic Mill.

I decided to make bagels yesterday and rather than use the machine to mix, I got this bright idea to hand mix using the autolyze and the stretch and fold method I have been using recently for my breads.

Turned out to be not such a great idea.

I found out very quickly that this method works better with a dough that has a higher % of hydration. Bagel dough is much lower hydration at 56% making for a much stiffer dough.

But I decided to finish what I started and I'm happy that I did.


We had Smoked Salmon and Cream Cheese on bagels for dinner.
