Hi, I'm hoping you can help. I wanted to make relish like the one at H&D. I found these recipes and would like to know if recipe #1 is okay to do in a BWB, and if so, how long would you process it?
Recipe #2 - could it be done in a BWB, as I don't have a pressure cooker. And if so, how long?
If there is anyway to adapt the recipes (adding more vinegar) or whatever, so I could do it in a BWB I would like to know that too.

Chunky Pepper Relish
3 jalapeno peppers, seeded and diced
1 medium onion, diced
2 ½ lbs. Tomatoes, peeled and chopped
1 tsp. Salt
1/3 cup vinegar
1 box pectin
¼ red or green pepper
½ hot chili pepper
4 ½ cups sugar
Mix peppers, onion, tomatoes, lemon rind, salt, vinegar and pectin. Bring to a boil and boil 10 minutes. Add sugar and bring back to a boil. Boil hard 3 to 4 minutes. Put into sterile jars and seal. Turn upside down for 5 minutes and then invert.
Red Pepper Onion Relish
6 cups tomatoes, skinned, diced and drained
6 large red peppers diced
8 cups sugar
2 tbsp salt
2 small boxes pectin
3 cups white vinegar
1 tsp ground red pepper
2 jalapenos, seeded and diced
3 large onions, diced
Mix all ingredients together, except pectin and bring to a boil.
Turn down and simmer for 2  2 ½ hours until thickened.
Pour into sterile jars
Process in pressure canner at #11 for 15 minutes.
