101 Chicken Question

Not being a venturesome cook, I need brave answers. We bake a lot of chickens - one meal and then chicken stock/soup, chicken salad, chicken sandwiches. Duh. However, the breast always is the last to go. Do you have, or can you teach me to throw together a recipe that calls for pasta and leftover cooked chicken that is basic enough for my great grandchildren to enjoy? Seems to me artichoke hearts would be fun, but that's as far as I've gotten. Any help or ideas you can offer would be greatly appreciated.
