Surprisingly yummy cinnamon cheese

I made an impulse purchase at Central Market last week of some Coombe Castle Cinnamon Cheese. I've never heard of cinnamon cheese, but it smelled so good through the wrapper I had to try it. It is delicious. Along with cows milk, it has dried apples, sugar, salt, cinnamon, and of course, cheese cultures and rennet.

My question is has anyone else had cheese like this? What to you do with it other other than snack on it, or serve it on a dessert cheese plate with fruit? I've pictured using it as part of a sweet biscotti made with brioche, but I have no idea if that would work. It's wonderful just on its own, and along side an apple or pear. I've already eaten it that way.
