I have a recipe for date cake that calls for it to be topped by a compote made from apples and kumquats. I do not like kumquats, nor can I find them easily around where I live. But I just don't like them anyway. They taste to me a lot like persimmons which I don't like either. What could I sub for it? Searching online I'm finding suggestions for orange peel, which would be OK in the compote. But folks say don't cook apples in orange juice due to bitterness. Well, to me, kumquats are bitter, lol! So I'm wondering if I should just add a little lemon juice? That seems so blah. It's a date spice cake. Maybe add some kind of booze to the compote? I like the cake part of the recipe, just not the compote topping with kumquats, so I'm open to suggestions. Oh, and BF loves dates which is why I'm making this cake, but he does not like lemon flavor. Don't ask me why, since I love it, but alas, this is one area where we are not compatible! :)
