Who knew....?

On Thursday, Oct. 10 my sister and I prepped a salad recipe for about 24 people. We gave a bridesmaids' luncheon the next day for my niece who got married Saturday, Oct. 11. The salad was my Green Salad with Grapes, Oranges and Avocados with a Citrus Dressing. (Toasted slivered almonds were passed at the tables to top the salad, if desired.)

Yesterday I retrieved the container of sliced green onions and finely chopped parsley, that had been prepped Oct. 10, to add to the chicken noodle soup I made last night. Both the onions and the chopped parsley were still fresh! Maybe the fact that we dried them very well before chopping helped them not to turn slimey and yucky? We also dried the leaf lettuce in the salad spinner and most of the leftovers of that look pretty good.

Good to know that it is possible to prep some salad ingredients ahead!
