with what do you frost an ice cream cake?

He's chosen cookies and cream ice cream with chocolate cake for the party. But I thought it'd be fun if we made it together. But the frosting? I'm at a loss. Whipped cream?

I've made ice cream cakes for kids. Preferred icing for my gang is cool whip.

You can also do it the really old fashioned way -- the same method that has long been used to make sorbet. Just pour the mixture into a baking dish, and set that into your freezer. Also, you will need a heavy glass or metal bowl, an electric hand mixer, and a bowl of ice big enough for the first bowl to sit in. Put the heavy glass or metal bowl and the beater attachments for the hand mixer into the freezer at the same time as the ice cream mix to chill them. When its almost but not quite fully frozen, use a fork to break it up into small lumps about the size of a nickle or a little less. Then put it back into the freezer about 10 minutes to set up a bit again. Now, working as quickly as possible, take the pre-chilled heavy bowl out of the freezer,and set it in a bath of ice cubes in the 2nd larger bowl. Quickly transfer the ice cream mixture into the chilled bowl, and beat it as much as possible with the electric mixer ONLY until the lumps are broken up, and it begins to whip up a bit. Then, back into the freezer for another 15 to 30 minutes, until its not at all "melty" but still a little soft. Repeat the beating/whipping process several times -- the idea is to whip as much air into it to make it creamy and fluffy as possible, without melting it too much at each whipping. The chilled bowl, the ice bath, and the chilled beaters help, but beware that the very act of beating it creates friction between the bowl and beaters, which makes heat, so this process is a balancing act between beating in air and melting the ice cream. Done right, which isn't at all hard to do with just a little practice, this method does work, albeit it will never be quite as fluffy as commercial ice creams you are used to, which not only incorporate a large volume of air into the mix using specialized equipment, but which also generally use gums and stabilizers which prevents the product from melting and turning liquid as fast as a pure, cream and milk only product will. Tis isn't a traditional ice cream cake, but I can absolutely vouch for it being delish! Of course, you could sub real whipped cream for the cool whip, dulce de leche for the caramel sauce, ganache for the chocolate syrup, etc... but it is pretty darn good the way it is written! I've made it both with and whout the peanuts - I prefer without, DH prefers with, so it is a toss up! Ice Cream Sandwich Cake 1 foil lasagna pan - the deep kind 2 boxes of ice cream sandwiches - usually 12 in a box (store brand works just fine) and you'll have a few leftover to stash back in the freezer. 1 12 oz. carton Cool Whip, thawed 1 jar each of Hot Fudge and Caramel ice cream topping 3/4 cup salted peanuts Cut one ice cream sandwich in half. Place one whole and one half sandwich along the short side of the ungreased pan. Arrange more sandwiches in the opposite direction in the pan; cut to fit as needed. Spread half the Cool Whip on these. Spoon or pour Caramel topping (I use about 1/2 the jar) over the Cool Whip. Sprinkle with half the peanuts. Repeat layers with more ice cream sandwiches, Cool Whip, Hot Fudge topping (nuke 15 seconds for easier consistency) and the rest of the peanuts. Cover tightly with foil and freeze. Remove from freezer 15 minutes before serving.

In the old days, my mom always spread left over icing on graham crackers, topped it with another gramham cracker, and stores them in the refrigerator for snacks. With 4 kids in the family, they did not make it through the day. With left over pie crust, she baked stickies--rolled out the remaining dough, buttered it, sprinkled it with light brown sugar and a little cinnamon, folded the dough in half and sealed the edges and baked. These stickies never had a chance to cool completely before they disappeared.

Some years ago I had to bake six chocolate jelly rolls for Christmas logs. Only owned one jelly roll pan so purchased the two in one package of aluminum ones at the grocery store to speed up the cooking process. Much to my surprise I discovered the cake cooked much better in these cheap aluminum pans than in my heavy, expensive one. Really made a difference. That's all I use now for jelly rolls. Grease the pan, cover bottom with wax paper and butter it. After baking turn the hot cake out on a bath towel (this gives you a thicker roll) covered with powdered sugar. Quickly remove wax paper, dust roll with more powdered sugar and roll. I allow mine to cool rolled in the towel and then continue the recipe. These inexpensive pans are what I use also when baking foccasia. Works well.

I would have tried whipped cream -- never thinking of cool whip -- which is probably a much better idea due to its properties!

Just wanted to say that you might want to have little bowls of sprinkles, nuts, cherries, etc., for him to put on the cake. My nieces always loved the decorating part. :O)

thanks party, sounds like fun! I'm planning on a cookie crust bottom, ice cream layer, then cake. Probably just one layer each of cake and ice cream? probably. Sprinkles and.... chocolate sauce. I'm not carried away am I? Yes, yes, I am.

Yes, I'd say cookie crust, ice cream and cake, creamy frosting and some chocolate or hot fudge, how can you go wrong?

I'd suggest crumbling the cookie part to make crumbs. A frozen cookie is going to be a bear to cut when it's time to serve the cake--you'll need a chain saw--LOL! You can always put a few small, whole cookies on top to decorate it. I'd go with real whipped cream, especially if there will be a bunch of young guests--some react so badly to food chemicals, and Cool whip is SO artificial (and tastes even worse when frozen than defrosted)

Rob, I agree with azalea that a cookie crust will be difficult to cut. It will also be difficult to eat on a serving plate. Using crumbs would work much better.

I don't like whipped cream or Cool Whip so can't add much to that part of the equation. :(

I'm copying a "bigger chain" who has the oreo crust on their ice cream cake ;) Maybe I'll just be sure not to smash it down too hard? so it can be cut. I'm still deciding on the topping. I might even use a "fluffier" frosting (Ree Drummond) that looks like it might stay stablized (with flour in it?!) well through freezing, and somewhat thawing. It won't be frozen when it's cut.

I did think whipped cream, but I can't see how it'll stand up well, even without freezing it, just adding it right before serving it? I thought about using a can of Reddi wip, cream out of a can that you spray on? It's pretty good, tastewise and it might work for much the same reasons as cool whip. Maybe.

He just likes to try to make his own cake. Part of the fun! He doesn't care what it looks like, yet. Wait'll he's been cooking as long as ann's or calillo's son. Then, he'll care. Probably.
