OK, had some sour milk I wanted to use up so I made the sour milk cake. Changes I made (you knew there would be some) I also had some blueberries I wanted to use up so I added these instead of raisins. To go with the blueberries I used 1 tsp of vanilla and 1/2 tsp of cinnamon, which I have found goes surprisingly if oddly well with blueberries. The cake took an hour and twenty minutes to bake. After an hour I covered it lightly with foil as I was concerned it might get too dark. We had some for dessert . It is quite moist and tasty, the colour is a sort of tan colour all the way through. I'll definitely make it again, maybe next time with craisins (can't resist tweaking :-) ). Thanks, Peter!

As Lascatx pointed out, the foil is there to keep the water from seeping into the cake. The hot-water bath (Bain Marie) is necessary in custard-type cakes, such as this one. It helps by protecting the cake from direct heat, and gently bakes it to creamy perfection. Most custard cakes do not freeze well. Meaning, the cake will not have the same creamy texture once it's thawed. It won't be inedible, just not as smooth. However, covered and refrigerated, a cake of this type will keep at least one week. Maybe two, though inconclusive. Being a hardcore chocoholic, I wouldn't know anything about that. Sol

My thought is she could have used extra large eggs or if not did she misread 2/3 of mixture in pan for crust thinking it was 2/3 c oil along with eggs & cake mix. The choc chips she used may be some that have changed, I read somewhere that the chip companies want to add more "fillers" to choc chips. Great, then I will have to chase around to find block choc. 1 major brand already makes lousy fudge, I threw some out 2 yrs ago. Does anyone want coconut oil, poly-whatever, thickening agents etc, instead of good choc. flavor???? Anyway the oils or whatever is in the chips may be melting out or the margarine, was it tub type or stick/cube type?? Tub type doesn't take to heat too well(grilled cheese sandwich will burn not brown)It could have made it gummy.
