Lindac's Apple Cake with Cake Gravy

Just wanted to give a big ole thank you to Lindac for posting her recipe for Apple Cake and Cake Gravy. Made it up and served at a family get together yesterday......Oh my Goodness!!

Excellent cake, excellent gravy, not a speck of cake was left over and there were 5 other desserts on the table!

Cake was very easy to make, didn't even break out the big ole mixer, just used a whisk and spatula.

I did double the gravy recipe....afraid there wouldn't be enough (there would have been) and had some left over. Gonna freeze for another time.

Anyway, if you haven't tried this recipe, I highly recommend it! Easy and wonderfully delicious!

Glad you liked it.......but have to confess....the sauce is Ann T.'s caramel sauce she uses on bread pudding....and I thought to serve it on the apple cake....and someone at the table asked what that pitcher of warm stuff was that I was passing....and my son said "Cake gravy"...so...that's what it is!

I love this cake also and made it last week. I took it to the field and just poured the "cake gravy" over the warm cake. So delicious!!

Hi Cynthia, Yes I did add about a cup of extra flour. It made the cake much more solid when done. I also baked it longer but I 'm not sure of the total time. I just checked with a tooth pick for a couple more times before I took it out. I don't usually mess around and change recipes I have never made before but I thought there was too much moisture in the cake when I finally added all ingredents so added extra flour till I liked the feel of the batter. It was very 'thick feeling' when stired. I may try it the correct way and see what that looks and feels like when done. I may prefer it that way although my version was very good. Another reason I changed the flour was because I added more cut up fruits than called for and I didn't measure the apples just used all I had prepared. I don't bake as much as I did when there were more around to eat it! My H and I don't need the extra goodies. Connie

This is my favourite apple cake. Home Cookin Chapter: Recipes From Thibeault's Table =================================== Buttery Apple Cake Source: Savoring Italy by Michele Scicolone 1/2 cup plus 1 tablespoon unsalted butter 3 Apples (Golden Delicious) peeled, cored, and cut into slices 1/4 inch thick 2/3 cup all-purpose flour 1/2 teaspoon baking powder 1/2 teaspoon salt 2 whole eggs, plus 1 egg yolk 1 teaspoon vanilla extract 1 cups granulated sugar 1/2 teaspoon grated lemon zest confectioners sugar Note: I used Red Delicious Apples . Preheat oven to 375Â°. Generously butter a 9 inch round cake pan with 2 inch sides. In a large frying pan over low heat, melt the butter. Pour 6 tablespoons of it into a small bowl or cup and set aside. Add the apple slices to the butter remaining in the frying pan and cook, stirring occasionally, until the apples are tender, about 10 minutes. Removed from the heat. In a small bowl, stir together the flour, baking powder, and salt. In a large bowl, beat the whole eggs and egg yolk until blended. Add the 6 tablespoons melted butter, the vanilla, the granulated sugar, and the lemon zest. Stir in the flour mixture and the apples. Spoon into th prepared pan, smoothing the top. Add the oil and eggs to the apples and sugar and dried fruit. Stir in the dry mixture and add nuts if desires. Pour into greased 9 by 13 pan and bake 350 until doneÃÂ¯ÃÂ¿ÃÂ½..40 to 50 minutes. Could someone please repost the original recipe? When I did a search, the fractional part of the ingredients' measurements was replaced by diamonds with question marks. A former teacher drummed the mantra, "baking is chemistry" into my head and I don't want to botch this up.

here ya go....those formatting problems with the fractions are really beyond annoying!
Apple Cake

4 cups chopped apples
1 1/2 cups sugar

Mix dry ingredients
2 eggs
3/4 cups veggie oil
1 tsp vanilla
beat together
1 cup chopped pecans if desired.
Add the oil and eggs to the apples and sugar and dried fruit. Stir in the dry mixture and add nuts if desires.
Pour into greased 9 by 13 pan and bake 350 until doneÃ¯Â¿Â½..40 to 50 minutes.
Serve with cake gravy!

Cake Gravy
Mix 1 cup sugar ..half brown half white
1 stick butter
1/2 cup light cream
1 tsp vanillaÃ¯Â¿Â½.
Mix all and cook all in a sauce pan for about 5 or 6 minutes until caramel colored.
Serve warm over the cake.

Do you recommend any particular type or mixture of apple, or is this cake delicious no matter what? Thank you.

I just use whatever I have around....Granny Smith's mean the apple pieces stay sort of in tact, gala means they cook down a bit more....Honey crisp are very sweet....but I like that...

Ooh yum......I'm making this tomorrow. Current plan is to freeze half .....wanna bet I don't :-)

I used Arkansas Blacks because I had them. they were firm like Granny Smiths but sweeter and I had chunks of apple in the cake. I think any kind of apple would work in this.
Chase, just freeze half BEFORE you taste! :) preferably in another location.

My DD, Annie, made a recipe just like like this (that she found online), but bigger, for a tube pan. She substituted applesauce for the oil and Egg Beaters for the eggs. It is incredibly good and so light. It's a wonderful recipe either way, but with these substitutions it has NO FAT, and no cholesterol so I can enjoy it too.

As I was reading her recipe tonight, I thought it seemed familiar, and here it is, Annie's Apple Cake.
