Cast Party Treats For Next Week :-)

Hi everyone,

Next Sunday is the cast party at the theatre of our production of the comedy/mystery "West Moon Street". I have already decided on what to make for the occasion: Pie Filling Cake and Orange Lemonade. Here is the recipe.

Pie Filling Cake

1 cup butter
4 eggs, beaten
2 cups flour
1 cup sugar
1 can cherry pie filling (I'm going to use blackberry instead)
1/4 tsp. salt
1 tsp. vanilla

Grease and flour cake pan. Beat sugar and butter together. Add four beaten eggs and flour. Mix well. Save 1 cup batter. Spread remaining batter in cake pan. The mix will be thick. Spoon pie filling over batter. Spread the 1 cup of saved batter on top of pie filling. Bake for 30 minutes at 350 degrees. Cool and sprinkle with powdered sugar.

I assume that it's to be baked in a 9 x 13 inch pan and that the salt and vanilla go into the batter as well. Why the instructions didn't give that, I'll never know, but anyways, it sounds like a recipe that they'll enjoy.

Brad, that sounds like a good combination but I note there is nothing in the batter to make it rise, like baking powder or baking soda. It could be something like Dorie Greenspan's Swedish Visiting Cake. If so, I think a 9x13 pan will be fine, as hers has half the butter/eggs/flour called for by yours and hers makes one 8 inch layer.

I'd be sure to beat the butter and sugar very well, to lighten the batter and I'd add the salt with the flour and the vanilla when I added the eggs to the creamed butter and sugar.

Blackberry filling sounds delicious.

The top 10 list you suggested --does that mean 10 people you want to invite to a really nice restaurant?: At $30 a head, (and thats a low estimate) that would be $300 without alcohol. I know that for $500 I have done parties for 25 easily. I didn't read that your Dad wanted it at a hotel. We are entertaining 20 people tomorrow and planned it Wednesday. I just finished baking 24 cupcakes frosted 3 different ways. Took 45 minutes. Cooked pasta for pasta salad and partially prepared and refrigerated it. Tomorrow add sliced olives, celery, mayo & shrimp & parsley, green onions. Tomorrow morning make hamburger patties and buy buns. Add baked beans and deviled eggs. A couple people are bringing appetisers. It would not be that much work for 35 people--just add watermelon slices & fresh strawberries, and add a 3 bean salad. If Dad likes the fun of a party get a small keg of beer and let him be bartender. That will attract a crowd and make him be the center of attention. He could also mix Sangria instead and you can dilute that to whatever strength you like. Mine barely has any wine in it but lots of fruit juices and club soda. Use colorful plastic plates and cups. Somebody must have a back yard. I live by the beach near LA and nobody has smaller yards than we do. Many of my neighbors live on lots that are 30 x 90 and they manage to party often. It doesn't take money, but it does take time. We all work so its not like we have nothing else to do. My husband recently had a cardiac problem and he's younger than your Dad. but if he wanted a party, believe me I would arrange it. I would think your Mom ought to be able to arrange a lot of this stuff--she raised several kids during a time when McDonalds was not the primary food source.

The party was a hit and so was my costume! We only made the deviled eggs and some Trick Or Treat Punch (frozen lemonade concentrate, orange powdered drink mix, and ginger ale and we cut up an orange to add to the pitcher). All the other food was delicious and a good time was had by all. Two of our guests didn't show up, but still it was a good time just catching up with old friends and got to meet some new people as well. Stay tuned for when I post pictures of me in costume! Aw, mobuddy, thank you! I feel pretty happy these days, my life has never been better. I've got my share of neurotic anxiety, but far less of the latter than in years past. I do love my little house, I always have, and now it's sooooo much better than it ever was before! blfenton - good idea. Thank you. I just put a gray and a brown Sharpie on my Amazon wish list. They were really small scratches, but still. When my counter arrived, I noticed a very small scratch/chip near the sink. The install guy used a Sharpie on it, and the flaw pretty much disappeared. Let me know if you have Living Room advice over on Home Decorating.

Yes, that will help it rise. And if you add a teaspoon of baking soda, and a teaspoon of shoe polish, it will rise and shine.

LOL! Just kidding.

Sounds like it will be a nice casting party. I like blueberries better than cherries.

I have found a different recipe that uses cake mix, veggie oil, eggs, water, and pie filling. I have an unopened box of French Vanilla cake mix that I can use :-),

Here is another recipe that uses a can of cherry pie filling, but you could substitute blackberry:

Cherry Cream Crunch

Crust:
1/2 cup unsalted butter
1/3 cup brown sugar
1 tsp vanilla
1 cup sifted all purpose flour
1/4 tsp salt
1/2 tsp cinnamon
1 cup flaked or shredded coconut, unsweetened
1 cup granola (or oatmeal or rice flakes*)
1/2 cup chopped raw walnuts - optional

Lemon filling:
2 eggs, slightly beaten
1 can (15 oz.) sweetened condensed milk
1 tbsp grated lemon rind
1/4 cup fresh lemon juice
1/8 tsp salt

1 can (20 oz.) of cherry pie filling

Crust:
Cream butter in a large mixing bowl; gradually add brown sugar and vanilla. Mix well. Sift flour, salt and cinnamon; add to butter mixture. Stir in coconut, granola, and walnuts. Press 2-1/2 cups of crumb mixture into bottom of ungreased 9x13 inch baking dish. Bake at 375 degrees for 12 minutes.

Lemon filling:
Prepare the lemon filling by combining the slightly beaten eggs, sweetened condensed milk, grated lemon rind, fresh lemon juice and salt. Stir until mixture thickens. Remove crust from the oven and spread with lemon filling. Spoon the cherry pie filling over the lemon filling and then sprinkle with the remaining crumb mixture. Return to oven and bake at 375 degrees 15 to 18 minutes or until delicately browned. Chill before serving. May be served topped with whipped cream. Serves 9 to 12.

*If using oatmeal or rice flakes instead of granola, increase brown sugar to 1/2 cup.

This recipe is from Cooking with Gourmet Grains from Stone Buhr, published in the mid 1970s in Washington State. I've made it quite a few times.
