To brulee or not to brulee?

I always wanted to make creme brulee - who doesn't love firing up a blow torch?! - but the one time I tried it, it was so disgustingly sweet - think I'd rather choke down a hunk of baklava - I threw it out and gave up on the whole idea. Now, years later, I finally have to ask... is that how it's supposed to be, or did I get the el cheapo candied version?

I love creme brulee. It is very rich but I don't recall it being achingly sweet beyond the torched suger crust. It depends on how much sugar is used in the custard, of course.

Well, it is a sweet dessert - try making a teeny test batch of the custard and getting the sweetness to your taste, then make the dessert as adjusted. The caramelized sugar crust is sweet but thin - it shouldn't gag you with a spoon, unless someone makes it way too thick.

Here's a photo of our Creme Brulee from this season: I like Creme Brulee a lot, but have never grown "Full Moon". The Creme Brulee does work well at the front of the border of our south-facing garden bed. It gets well over six hours of sun a day. It has been blooming many weeks now and still going strong in Zone 6. It seems to be fairly drought-tolerant. Wondering about growing a Geranium and a Coreopsis together? What is the sun level like in your "Rozanne" geranium bed, and is the soil moist? The reason I'm wondering is...I've heard Coreopsis can develop crown rot if it's in soil that's too moist, so am just wondering about combining the Coreopsis and the Geranium in the same bed... We have "Jolly Bee" geranium, and Geranium cantabrigiense "Biokovo", but they are growing in a different bed from the Coreopsis, and they get shade in the afternoon. I actually had to transplant these geraniums because they were getting a little fried in the south-facing bed. They're in an east-facing bed now, that is more moist, and are doing very well. I've never grown "Rozanne" geranium...does anyone know if it's similar as far as what kind of conditions it likes or have thoughts about a geranium/coreopsis combo as far as sun & moisture levels? Would a Rudbeckia be a better choice?

They are probably not getting enough light. Plants with variegated leaves or non-green leaves may revert to green when they need more light. Try moving your pot and see if that helps. Creme brules can take more light than some other heucheras.

OH yes - the gal who makes these makes them for us every time we all get together! They are delicious! Sausage and Grits 1 cup uncooked grits 12-oz pork sausage, defrosted 1 onion, chopped 4 1/2 oz can green chilies, chopped 1 stick butter 2 eggs, beaten 2 cups grated cheddar cheese Preheat oven to 325. Cook grits in 4 cups salted water until thick. Saute sausage, breaking it into small pieces. Add onion and chilies; drain. Add butter, eggs and cheese to grits, Combine grits w/sausage mixture. Pour into 13 x 9 inch casserole dish. Bake 1 hr. Can be refrigerated up to 2 days before baking. Freezes well.

Oh yum, I love the stuff and my office staff asks for it regularly, they say it's a cross between flan and french toast. I use homemade bread, usually Grandma's Farmhouse White, which is sweet, dense and eggy anyway, much like challah, I cut about an inch thick because I want egg all the way through. I use all sizes of eggs, because I use whatever I currently have and that the chickens are laying. Even now I don't have hens, I get my eggs from the Amish, and they can vary greatly. I leave out the Cointreau entirely, so I'm sure it would be OK with more, LOL, you can have the part that I leave out of mine! And, just to gild the lily, I always have a shaker of powdered sugar at the ready, although my girls really want "fried apples" to go with it. Just some peeled and sliced baking apples, preferably MacIntosh for us, sauteed in butter and sprinkled with brown sugar when they are nearly done. Obviously you didn't make it yourself. They don't have to be achingly sweet.
The way I make creme brulee
2 cups half and half ( I have even used just whole milk)
3 beaten eggs
1/4 cup sugar
generous pinch of salt
1 tsp vanilla
Beat all together and pour into buttered oven safe dishes...I divide into 6.
Bake in a bain marie at 300 degrees for about 20 to 30 minutes until just set at the edges and half way into the middle of the dish.
Remove from the oven and leave in the water to cool and chill....or cook until all set if you want to serve immediatly....but I like them better chilled before doing the brulee bit.
sprinkle 1 tsp sugar over each, torch and serve. I love the contrast of the warm sugar and the chilled custard!

Thanks ever so, y'all! Maybe I'll give it a whirl, after all. I realize now I wasn't clear in my original post, No, I didn't make it myownself. Can't remember exactly where I got it, just that it was inedible.

I agree, I make my own and it's only as sweet as I want it to be, and I have a great sugar-free recipe that everyone likes.

I recently discovered Panna Cotta, same texture but not as rich, and right now, the (grown) kids like it better than creme brulee.

I've been wanting to try panna cotta. Think I might start with a recipe I saw recently for a dark chocolate, caramel and goat cheese version.
