How do I use a Lame??

Greetings Peoples!!!

Okay, From what I've read... and experienced... You need to "score" bread before baking. The problem here is that the scoring process takes place *just before* shoving the loaf into the oven...

So??? When I do it then, 75% of the time I end up with Flat Loaf!!!!

Any tips or techniques out there to solve this problem???

Gently...and quick...rather like ripping tape off a wound...
but if your loaf is over proofed, it CAN collapse.
I use a box cutter....or when the blade gets rusty, I go to a double edged razor blade.

And.....use the lame v-e-r-y c-a-r-e-f-u-l-l-y, especially when taking off the safety cover.

Dave, In the actual print article, those are the instructions in the "box". It just doesn't show like that online. I do agree that it would be relatively safe to do, except for the curd, which it doesn't say not to can. What gets me is the assumed knowledge. Like fill jars with set jam. How are you going to get set jam in the jar? Then, all they say is to seal with a lid. What kind of lid? What disappoints me is that newbies may following these instructions and end up with a mess, then never want to try again. Elaine

Fire ants make mounds and not holes. The mounds start out small and become larger as the colony population increases. These mounds look rather innocent until you disturb them, and ALL of the ants boil out of the mound all at once. Again, there is never a discernible hole. I never worry about ants in my yard and garden, other than fire ants. Fire ants can be a problem for humans, pets, bird nests, beneficial insect eggs and larvae, and such.

Listerine is a readily available home remedy which may be used on orchids. The original (gold colored) Listerine has anti-fungal, and probably anti-bacterial qualities. The high alcohol content makes it also effective against bugs. Since it is fairly weak, it is largely used by the growers on this site as a preventative, particularly when potting, or as something in a pinch until you can get something better. It is used full strength as a spray on, and should not be used for prolonged periods because the alcohol may have drying effects on your plants. Using it for 2 3 days consecutively is not a problem.

Beagles - I think we had that before as well. TV was smaller though so it fit the length perfectly. I think our TV is also a 70" - the true measurements are 37 1/2" x 65 13/16". Yours looks nicer than I think ours would (being unevenly matched in width) because you have the cabinet to define the boundaries, plus the shadows help. I will have to look around for side speakers like RoseAbbey has - if they match the height, I could definitely accept that. Homepro, thanks for the link. Those would be OK, again, ideally if it's the right length.

Slice quickly on an angle and no more than 1/4" deep. Most problems come from over risen dough, the slashing is too deep, or a dull blade causing drag and deflating the dough. A lame doesn't last forever - when it's dull get another. They're cheap.

With some practice you can develop your own personal decorative style of slashing.

I use oiled scissors, and cut tiny slits. that seems to work pretty well. If you have too much friction between the dough and the blade, it's a disaster.

Scissors work well, even without oil for many recipes.

A sharp thin lame helps. I use a double edged razor threaded on to a wooden skewer. This gives it a nice curve and it's easy to replace the blade when it starts to lose its edge.

I f you will follow the link below you will find a forum with all the info you will ever need for breadbaking. There is a scoring video made by David, one of the members , that will explain everything.

You are over-proofing your bread if it is collapsing on scoring. To get a clean score you can spray lightly with water and it will go right through the bread nicely. You should barely be able to discern the cut and it should be at a 30-40 degree angle.
