Braised Beef

I was hoping to try something out but not sure if it will work. I want to make a braised beef and would like my portion sizes to be 3 x 3 or so. Can I use a roast cut up to this size (for six portions or so) - sear it and then slow roast it for hours? I don't want a thin sauce either so would braising without a lid at the end help.
