Does anyone have a recipe they use regularly? I had one long ago but have misplaced it and am not able to find it online. I've seen recipes using wonton wrappers, phyllo, and even pie dough as the cover - and of course some make their own as well. I need a baked rather than fried recipe and also no lentils due to allergies. Thanks!

Here's one I like. 1 tblsp mild curry powder 1 tsp dried mango powder 400g potatoes boiled and mashed 110g fresh or frozen peas 1 tbsp chopped coriander 1 red chilli chopped salt 3 large sheets filo pastry I would add a chopped onion; Stir fry the ingredients.

Thanks, Islay - this sounds good - haven't ever used (or heard of) mango powder, but it sounds like something I need to get my hands on - thanks again

Here is one that uses crescent rolls that I tried. It was good but nothing like a samosa from an Indian restaurant! http://www.tasteofhome.com/recipes/Crescent-Samosas

I don't have a recipe but I can add that I have tried a recipe for "sweet potato knishes" (very much like a samosa) with wonton wrappers, baked. They were just not good. Wonton wrappers come out gummy if you don't fry them, or if you put enough oil on them to bake them and have them have a good texture, then that defeats the purpose. Anything with a crust is going to need shortening to be good, unless you consider a baked dough like a calzone, but then that would be something very different. I do have an all oil pie crust recipe that I might use if I was just worried about saturated fat. Here's that recipe: Put 4 TBLP COLD water into 1/2 cup oil. Stir until small bubbles form throughout the mixture. Pour liquid into flour and stir. Separate into two piles (This is for a double crust pie). Roll out between two sheets of waxed paper. You have to do this because this crust is very sticky.
