Different Yeasts

HI, not sure if this has been addressed before. When I go to restaurants, they serve nice soft yeasty rolls. Or ordering pizza, it seems that the crust is very yeasty. Love that taste.

When I make bread or pizza crust at home from the packets, it lacks that yeasty flavor.

Can anyone tell me what I may do different to achieve that flavor?

I know when my husband brews beer, he uses different yeasts, but I can only find a few brands in the baking isle in the store.

I hear you dspen! I'll be interested to read the responses to your question. I have my aunt's old recipe for butterhorns that calls for cake yeast. When I use the dry yeast they lack that yeasty flavor and are not nearly as good. I've asked at the grocery store and was told they don't carry cake yeast anymore because the demand is low and the shelf life short. Someone suggested asking a bakery if I could purchase some but that seems like a lot of bother. The result is that I just don't make them any more.

According to what I've read in my recent bread baking study, there are only about 3 strains of yeast that make bread rise. There are dozens in all, but when a yeast culture is mature, the others are squeezed out and the rising yeast dominates. Or something like that. I'm no expert.

According to Wikipedia: Baker's yeast is of the species Saccharomyces cerevisiae, but a different strain than is used by brewers. Saccharomyces exiguus (also known as S. minor) is a wild yeast found on plants, fruits, and grains ... comes from being propagated in a sourdough starter.

Fleischmann's has a nice little outline about yeast.

Anyway, it's not the brand of yeast you're buying that makes the difference. Most bakers are trying to get rid of the yeasty taste, so you can surely develop it!

Yeasty tasting breads, in my experience, are ones with more yeast. Simple as that. They put extra yeast in the pizza dough so that it'll be ready fast and they can load it up with toppings and still have it rise. A lot of "easy" bread recipes have a huge amount of yeast in them so it'll rise fast and you don't have to wait around for it to multiply. If you can get your hands on cake yeast, all the better, but you can achieve it with dry. Proof your yeast with some of the liquid in the recipe, preferably warm (baby bottle temp), and some of the flour, or the sugar if it's in the recipe. A couple of tablespoons will do, plus the yeast and a cup of water or milk. Once it's all bubbly and blooming, make your dough. This is good to do anyway if you might have old yeast. If it doesn't bubble and rise, you haven't lost a whole batch's worth of ingredients.

Sorry about the delay in getting back to you, we've been out of town for a week and I just got back late this afternoon and am playing catch-up. Glad you had good results with the recipe. I give credit to my friend Mildred in Missouri for sharing the recipe with me. 1. I would add the coarser flour to the sponge. Either will work (as you have discovered), but the sponge gives the sharp bits of bran time to soak up the liquid and soften in the coarse flour. Those sharp bits can cut gluten strands. 2. Bread Machine Yeast is a type of fast-acting yeast like SAF-Instant is. You made a good substitute. SAF-Instant is a "super" yeast, and somewhat different from the other brands of fast-acting yeast products (Bread Machine, Rapid-Rise and Quick-Rise). I consider SAF-Instant a superior choice over the other fast-rising yeast products, but that's a personal choice. I've used all of them at one time or another over the years. 3. Pan sizes... A 9x5-inch pan is actually designed for quick breads and holds about 2-pounds of dough. For over two pounds of dough you would need a Jumbo Pan - 10x4-1/2-inch. I personally don't like these over-size loaves, especially when trying to cut thin slices. Small loaves are easier to cut thin than large loaves. Another personal preference. Standard 8-1/2x4-1/2-inch pan holds up to around 1-1/2-pounds of dough. I have a pair of Norpro pans that are just slightly smaller at 7-3/4x4-1/4-inches that works very well for 2 loaves. 7-1/2x3-1/2-inch pans - up to 1-pound of dough. I often divide the dough equally into three of these small loaves. I will also divide the dough into one 1-1/2-pound loaf and the rest for something like an 8-inch pan of dinner rolls, 6 jumbo pecan cinnamon rolls, 6 hamburger or hot dog buns. The cultured milk products (dried or liquid buttermilk, kefir, yogurt) seem to aid in the sponge. My friend, Mildred, often uses up to 24-hours, with half the time in the refrigerator, similar to what you did. A very forgiving recipe, as you've just proven. I also like to add 1/2-cup of coarsely-ground multi-grain mixture, similar to multi-grain cereal (5-grain, 7-grain, 11-grain, etc.), except I mill my own. I add it towards the end of kneading to keep the sharp bits from cutting the gluten strands. I like the "tooth" it adds to the bread. -Grainlady

Oh Renee, I couldn't agree more. I'm tired of being bullied because my view is stated in a different way than another poster's. There is a very small minority who think their recipes or techniques are the be-all/ end-all, "ubiquitous, know-it-all approach with narrow-minded views" of the culinary world. That is when unpleasantness rears its ugly head. When that happens, it is unfair to the whole forum. I for one would have left this thread a few posts ago, especially when I realized that one particular member refused to see the passive/ aggressive nature of their posts, then devolving into personal attacks to other posters. It's difficult to not defend one's integrity when it's called into question. Imagine how you would feel if someone referred to you as condescending, superior, a liar, a know-it-all. I believe that everyone but one person in this thread has agreed to disagree. I, for one, appreciate the beautiful photos many of our talented contributors generously post. It certainly takes additional time on their behalf to photograph the food, choose the appropriate photo for their post, then to share it with everyone. I learn how to plate food to make it look more appealing. I don't find it competitive, I find it encouraging. I think it has given a lot of us in this digital age the impetus to become more artistic, not only in our food preparation, but also in the art of presentation. How is that ever a bad thing? I think the main spirit of this forum is quite pleasant - these kinds of threads are very few and far between. Bejay- "Best method" is subjective. It's more important to understand what characteristics each method brings to your bread and let you decide "best". As Shirley Corriher says in her excellent book "CookWise", "Give ten bakers the same flour, yeast, salt, and water and have them make bread with just these ingredients and they will make ten different loaves of bread." There are three basic methods of breadmaking: -Straight or direct-mix method (relatively fast method most often used today) -Sponge Method (all of the liquid, yeast, and part of the flour are beaten together and allowed to ferment - anywhere from 30-minutes to 12-24 hours) -Naturally-leavened (sourdough or starter) As a bonus not normally lumped into these standard bread methods, I'll add the No-Knead Bread Method - a modern version of the sponge method made by retarding the mixture in the refrigerator. Each of these methods impart their own "stamp" on breads. If I want to make light, high-rising loaves of 100% Whole Wheat Flour Bread, and avoid those whole wheat "bricks", I'll use a sponge method which is better suited for this type of bread than using the straight-dough method. Even as little as a 30-minute sponge will improve your bread. "Experts" say the optimum amount is 2-1/2 hours for a sponge. For whole wheat bread I prefer an overnight sponge, but 2-1/2-hours works well enough. When dough is chilled (retarding the dough), it influences the dough in three ways: -Enhances the flavor (the yeast goes into dormancy so it no longer consumes all the available sugar and the bacteria present can feed and produce flavorful acids. -Reduces ovenspring and loaf volume -Opens texture slightly There are those wonderful recipes for Cool Rise Bread that helped the busy homemaker in the 1950's. The recipe from Kitchen Aid for "Quick Mix Cool Rise Bread" was very popular. When it comes to the sourness of your starter, that can determined by the amount of hydration in your mixture. It gets more acidic the less water is in the mix. Once the yeast has consumed the sugar, the yeasts die off. The bacteria have a chance to develop that "sour" taste and will consume the dead yeast and produce lactic acid - the same souring acid found in yogurt and kefir. Adding yogurt is a modern adaptation, but when it comes to starter, they are about as varied as the people making them ;-). In my grandmother's day, they used starter all the time and never called the bread "sourdough". When the bread took on an acidic flavor we think of as "sourdough" bread, they did what was called "sweetening the pot". They took a tablespoon of the starter, and with consecutive feedings, developed that small into their usual amount of starter for the typical mild-flavored breads they made back then. Before the advent of fresh and dried yeast products, there were any number of methods for making naturally-leavened bread. "Old dough" (a lump of dough packed into flour and kept cool until the next baking day when it was used to make a starter), homemade yeast products made with hops and cornmeal, dry homemade yeast as well as liquid homemade yeast and starter.... I can make a naturally-leavened bread by using my homemade kefir + flour for the starter. There are lots of friendly bacteria in the kefir and lots of yeast in the whole wheat flour - more than enough to make bread rise. -Grainlady

Ok...here goes again :) You can't ever ever substitute RAPID RISE for anything else...never. The recipes that call for it have taken its specific properties in to consideration and the final product will be a result of this. ADY or Active Dry Yeast and Instant Yeast are interchangeable. The only difference is the amount you use. 20% less instant and you MUST activate ADY with warm water , you do not need to activate instant. I will cut/paste this info and attach a link from The Fresh Loaf. Hope this finally clears up the confusion. The reason annie has not had a problem with a too fast rise is , as she says, she has not use Rapid Rise. "Active Dry Yeast This is probably what comes to mind when you think of yeast. It's dry and granular, about the consistency of cornmeal. To use it, you dissolve a few teaspoons in warm water (110-degrees or cooler) and then add it to the rest of the ingredients. This yeast will behave 'typically' and will give your dough two rises. Instant Active Dry Yeast This is also known as "bread machine yeast." This yeast is milled into finer particles and it does not need to be dissolved in water like active dry yeast does so you can add it along with the dry ingredients. This yeast also gives you two separate rises and it can be used interchangeably with active dry yeast. Measure out the same amount of yeast and skip the water-activation step. Rapid-Rise Yeast This yeast has also been milled into smaller particles so that it doesn't need to be dissolved into water. In addition, enzymes and other additives are included to make the dough rise faster. With this yeast, you can skip the first rise of the dough and shape the loaves right after kneading. What you save in time, you lose in flavor and structure. Your final loaf will be fairly bland and commercial tasting, with a tight, uniform crumb. Since it behaves so differently, this yeast cannot be substituted for either active dry or instant active dry yeasts. Fresh Compressed Cake Yeast This is the kind of yeast that commercial bakers tend to use. It's a solid block with a clay-like consistency, is more dependable, and dissolves easily. However, it's 2-week shelf life makes it less ideal for home bakers to use (the granular yeasts above have a shelf-life of about a year in the fridge). Fresh cake yeast is the key, I think. Depending on where you live, you may be able to find fresh cake yeast at ethnic markets or make friends with a bakery and ask if they will sell you some. The older local stores may have it or ask if they can get it for you.

Be sure to read up on the internet about using fresh yeast, as it is quite different from the dry yeast on the market.

Diane, it may seem counter intuitive, but to get more yeast taste, use less yeast. The way it works for most pizza shops is that they make the dough the day before and keep it slightly cool , and don't use it till the following day. When making it at home, it is pretty common for people to let the dough bulk ferment at a cool temp ( fancy way of saying first rise ) for several days. Either way, they use less yeast because the longer it takes to fully develop, the more flavor the yeast creates.

With bread, it is more common to use another technique, which is using a poolish, ( or a biga or sponge ). You take say 1/3 of the overall dough and add 1/3 of the water and just a touch of yeast and let that ferment overnight, then the next day, you add the rest of the flour, water, salt, and yeast. The overnight fermentation gives it a much more developed flavor. The link is to a lesson from the Fresh Loaf, it describes the first step as a sponge - but for this purpose, it is the same thing as a biga or poolish - just a head start to allow the yeast to slowly develop. I didn't link lesson one, but you can find it on that site - it uses what we call the straight method - no sponge or poolish and as the lesson 3 points out, the one with the sponge had a richer flavor. As to yeasts, generally the type of yeast doesn't impact the flavor much unless you use a wild yeast, also known as a starter or a sourdough yeast.

Yeast bread is a many wondrous thing.....

I agree, cake yeast may be the key, but it's nearly impossible to find these days unless you can find a place of business that uses it and they are willing to sell you some. Most restaurants and bakeries use SAF-Instant yeast around here for their fresh breads because that's what is available from the restaurant supply store. Active Dry Yeast and Instant Dry Yeast brands don't have the same yeasty flavor that Fresh Cake Yeast has.

Restaurants could also be using recipes where they have more yeast in them to make rolls faster. I have used a recipe from "Whole Wheat Cookery - Treasures from the Wheat Bin" by Howard and Anna Ruth Beck for 30-Minute Hamburger Buns, which is a good example of this method. It uses 6 T. of yeast for 10-1/2 cups of flour, and it literally takes you 10-minutes to mix and knead the dough and then you form the buns (eliminate the first rise), 10-minutes to let the formed buns rise, and 10-minutes to bake them. They DO taste yeasty, but it's not the "best" bread recipe, but it works when you need rolls or buns quickly. This type of recipe makes sense for a restaurant who may need fresh rolls quickly.

You could switch to recipes from "Artisan Bread in Five Minutes a Day" and "Healthy Bread in Five Minutes a Day" by Jeff Hertzberg, M.D., and Zoe Francois - where the dough is quickly mixed by hand, allowed to rise and then stored in the refrigerator and see if you like the flavor of those breads.

Pizza dough is refrigerated in most places, where it has time to develop flavor. If dough is frozen first, it has more yeast in the dough than a regular recipe will because a percentage of yeast dies when frozen, so more is used in order to have it rise when thawed. A good recipe designed for freezer dough will have more yeast in the recipe.

When dough is refrigerated (aka retarding the dough) bacteria produce wonderfully tasty acids in the cool temperatures. The cold forces the yeast into dormancy so it's not consuming the available sugars. Now the bacteria can feed and produce flavorful acids. You may even find a difference in flavor of your yeast breads if you have a cold kitchen temperature in the winter, and the dough takes longer to rise, than in the much warmer summertime kitchen.

There are also tradeoffs from retarding the dough - it reduces ovenspring and loaf volume. Chilling the dough also influences the texture of the dough and you will get a slightly more open texture. A little tip if you use an overnight chilling method. After chilling, you can dissolve a little yeast (1/2 t.) in a few tablespoons of warm water and knead this into the dough before shaping. This will help compensate for the reduced volume.

For every rule there is for making yeast breads, there are exceptions, and it's often the exceptions that make a great deal of difference.

You could also work with a sourdough yeast/lactibacillus starter, but given that you think talking to baker personnel, I'd be surprised if you were interested in something you have to feed every day for at least two weeks.
The flavors are nice though. I just finished a sourdough biscuit leftover from yesterday for my breakfast.
I agree that both the type of yeast and the time it's allowed to digest the sugars in the flour makes a difference.

Thanks so much for all of the responses and great info!!

I have tried the pizza dough where you make it the day before and let it proof itself over night. The crust turns out very nice but lacks that flavor I am looking for. I will try the sponge approach and maybe see if I can locate cake yeast.

I suppose its trail and error. And I don't bake everyday, so the chances for trying different techniques are few and far between. I am also sure that everyone has there own definition of what tastes the best!!
