Sharon, what do you think Penelope Casas means when she says "a jar of Spanish olives"? I have the new edition of her tapas book from the library. The recipe for Thyme-Scented Green Olives, Aceitunas al Tomillo, uses a 7-oz. jar of "large green Spanish olives." Here in the U.S., Spanish olives in jars are green olives stuffed with pimento, but somehow I don't think she means that.
