Maybe these would work for you....

Danish Apple Bars

2-1/ c flour
1 tsp salt
1 c shortening
1 egg , separated
Milk
1 c corn flakes
4 large cooking apples, peeled & sliced
1c sugar
1 tsp cinnamon

Blend thoroughly the four, salt and shortening. Combine egg yolk with enough milk to make 2/3 cup of liquid.
Add egg/milk to flour mixture. Mix until ingredients are just moistened. Divide dough in half, roll out one dough portion to 12x17 and place on jelly roll pan.
Sprinkle with corn flakes, top with apples. Combine sugar and cinnamon and sprinkle over apples.
Roll out remaining dough to 12 x 17 and place on top of papples. Beat egg white until stiff, brush over top of dough. Bake 1 hour at 400F

Glaze:
1 c powdered sugar
1 T water
½ tsp vanilla

Mix thoroughly and drizzle over cooled bars. Cut into squares and serve.

Sounds perfect.. Have you made it? Do the cornflakes get soggy? and is the crust firm?

My mom used to make them. I haven't had them in years, but I do remember they were good, so I saved her recipe.

They turn out kind of like apple pie but in bar form.

I would love one with cream cheese...some time I may experiment with my idea of a pate sucre and cream cheese with egg, sugar and vanilla and topped with apple slices, sugared and cinnamon-ed and maybe a crumble topping on top of that.....
Yep...people are funny....you can serve a plate of brownies cut into inch pieces and people will munch away, but if you put a 4 inch square on a plate with a fork, people will say..."Oh! I never eat dessert..."..( unless I can use my fingers!)

I have a recipe for a Blueberry-Lemon Cheesecake bar cookie ... I wonder if you could substitute apple filling ? I haven't tried it with apples, but now I think I might try it :) Or were you looking for a fresh apple dessert ?

So true about - it's not dessert if you don't need a fork or a spoon - LOL. Just put a small dish of chocolates at each end of the table for "non-dessert" and watch them disappear :)

"I don't eat dessert" is our cousin Arnie's middle name, LOL. When we were on a cruise with him a few years ago he always said "I don't eat dessert" and whenever we ran into him around the ship, he was eating an ice cream cone, a piece of cake, standing on the make your own sundae line, or the cookie and brownie line, LOL. We still have fun with him about no dessert!

Linda, I make a "pizza" that you could certainly make in square form and cut up. It's a caramel apple pizza. Recipe comes from Pampered Chef...

Sounds literesting. I'll bet kids would love it...but I had something in mind with cooked apple and without a gooey sauce.
I may just make an apple tart with a crumb topping and those that don't want to eat dessert can skip it.

I dunno Linda..I love it. It's a definate treat for me.

You could always use the cream cheese filling and do up a stove top cooked apple topping. (It's very similar to the "dip" I make for strawberries.)

What about something in a muffin cup? To give individual servings....

I haven't look close at Ann's recipe yet, could you do that in muffin cups?
Or maybe just a really tasty apple struesel cupcake/muffin?

Apple Kuchen Bars

For the crust:
2 cups all-purpose flour
1/2 cup sugar
1/4 teaspoon kosher salt
1/2 teaspoon vanilla extract
2 sticks unsalted butter, cold and cut into pieces

For the filling:
1 pound cream cheese, at room temp
3/4 cup sugar
1 teaspoon vanilla extract
1 egg, at room temperature

For the topping:
2 tablespoons sugar
1 1/2 teaspoons ground cinnamon
3 Granny Smith apples, peeled, if desired, cored, and thinly sliced

Preheat the oven to 450 degrees. Lightly grease and flour a 9x13-inch pan.

To make the crust: Place the flour, sugar, and salt in a large bowl or food processor and mix to combine. Add the vanilla and butter, a little at a time, and mix until it resembles cornmeal. Press into the prepared baking pan. Bake until slightly golden but not brown, about 12 to 15 minutes. Set aside to cool. Lower the oven temperature to 400 degrees.

To make the filling: Beat the cream cheese, sugar, and vanilla until creamy. Add the egg, mix to combine, pour over the cooled crust. Place the apples on top of the filling in two or three columns. Sprinkle with the cinnamon and sugar. Bake until firm and a rich brown, about 20 minutes. Cut into 20 to 24 pieces.

Cindy....that's exactlly what I was looking for....I wonder if I would use a bigger pan and spread the dough and the cream cheese topping thinner and bake a shorter time if it would become finger food?

It's already pretty thin the way it is - I cut it into smaller pieces and get more than 24 bars.

Yes, they are bars that you pick up to eat - I should have been more clear about that :)
I take them to picnics and outdoor parties all the time.

Cindy that sounds great. Do you think it would make a two day land trip as part of a care package? Maybe not with the cream cheese?

I'll vouch for the Danish apple bars. They are excellant, and always dissappeared at parties. My recipe used rice crispies instead of cornflakes. And the cereal was used to help prevent the bottom crust from getting soggy. You don't even really taste or notice the cereal. Cindy your kuchen recipe looks wonderful. I will be trying it this weekend!

well...it's in the oven....and I sort of made it up based on a composit of recipes! LOL!
I started with Ann's recipe for the crust, but that wasn't going to be hanging together enough....so I added an agg yolk...then it was a bit soft so I added a few pinches of flour and patted it into a very large very deep pie plate....and whipped up the filling of 1 pkg cream cheese, but only added about 1/8 cup sugar...seemed sweet to me...and an egg and some vanilla.
Then I cut up 4 grannie smith apples and tossed with just a couple of tablespoons of sugar and cinnamon....and put that on top of the filling....and decided toa dd a crumb topping ( needed more butter and sugar!!)so I mixed up about 2/3 cup of flour with about 1/2 cup brown sugar and 1/2 a stick of butter and a bit of cinnamon and piled that on top.
Can't be bad! I put good stuff in it!
