Older zuchinni peels

As zuchinnis age in the garden the peels get tougher for winter storage. I have chosen however to peel and make zuchinni chips. Is there something I can make or do with the tough skins? Dehydrate and grind, if so how to use them?

That is true for humans, not for zuchinnis. LOL!

I find zuchinni skin has a different taste and also require different cooking time. So I sometimes cook them separate.

I did one yesterday, as a matter of fact.

Great idea to try to use the peel (skin) because that's where most of the vitamins and minerals are! :-)

I've never dehydrated the skins alone. I always leave them on the dehydrated zucchini "chips". You may be able to use dehydrated zucchini skins if you peel them very thin and dehydrate them until crispy dry. Store them whole in a glass jar with a tight-fitting lid. As needed, run it through a coffee/spice mill and use as a powder. If you blend it all into a powder first, it will quickly pack and get hard because there are no anti-caking ingredients to keep it free-flowing, so powder it as needed. I'd be sure to taste it first and see what it might be good for as an add-in ingredient - dip, smoothie, sauce, soup.... Flavors can intensify and colors can change during dehydration. If you try this, please report back your results.

Squash vine borers are my guess. Check the base of your stems. You may find tiny holes with sawdust looking material coming out of them (called frass). If so, you've got worms eating through your plants. If they're at wilt state, you've probably already missed your window, but for your own satisfaction, you can slit the stems vertically and you'll see the worms inside the hollow of the stem. Pull them out with your blade or a wire and cut them up like a maniac. They have ruined your crop, enjoy making them pay. Once you're done with your violent celebration, mound up as much moist and fertile soil as you can around the stem, all the way to the top of the vine, and keep it well watered over the next week or so. You may be lucky. I personally have found tons of borers in my squash plants in Texas. So far, my defense has been to do the above if they've made it in. Otherwise, I just check each plant daily and peel off any flat red eggs they've laid (usually 10-50 a day) and throw them far from the plant. My guess is I'll still lose, but so far I've postponed the inevitable. If you're in Florida, you've got the same problem we do in Texas - the squash vine borer is active pretty much from May until September. Your best option if you don't want to be a nut like me is to plant solid vine zucchini (I believe there are a couple varieties) or treat them like lettuce and do succession plantings, pulling them out as they wilt. Thanks for all the replies. This is what I do (most of the time). On things like cereal boxes, pasta boxes, etc, I initially cut the boxes apart at all the seams. I give the larger flat pieces to my 6 y/o GD for her artwork. The narrow edge strips, tops and bottoms, get torn up and tossed into the compost. Then, after she has finished her drawing, she gives the big pieces back to me, and I peel them down, giving her more surface area to draw and doodle on. When she is finished, then she gets to cut them into strips, practicing her cutting skills. Then off to the compost they go. So we are reusing, then recycling. She's happy, I'm happy, and eventually the compost is happy. A good overall learning experience for her, plus it gets her more involved in the composting efforts. Sassy

How about this one... still have it, since when my girls were little. Zucchini Chocolate Cake t=teaspoon T=Tablespoon c=cup 2 1/2 c unsifted flour 1/2 c cocoa 2 1/2 t soda 1 t salt 1 t cinnamon 3/4 c margarine or butter 2 c sugar 3 eggs 2 t vanilla 2 t grated orange peel (optional) 2 c shredded zucchini 1/3 c milk 1 c nuts (optional) 350 degree oven mix first 3 ingredients, set aside Beat margarine and add the next 5 ingredients and add the flour mixture and milk. Mix well. Pour in to greased and floured bundt cake form (springform). Bake for 1 hour at 350 degrees. Cool in pan for about 15 minutes and then take it out of the pan to let cool the rest. Drizzle with icing if desired. Icing 2 c powdered sugar 3 T milk Really yummy with a dollop of whipping cream on top. :)

I'm going to repeat the 'clean'. If they don't have money for renovations (and quality renovations that respect the integrity of the house), hopefully they have time and can clean. Gleaming, fresh, sanitize and that means inside closets, built-ins too. No drips, leaks, dirt or stains. Scrub, wax, and freshen paint if that's necessary, then let the price acknowledge some updating may be needed. If the neighborhood is right, I think they'll have good results if they are realistic with their pricing. I sold a 1925 home earlier this spring that had a professional update to the bathroom, all fresh paint including woodwork, dry sound windows, immaculate landscaping. The kitchen was not a cooks dream, it was spotless and everything worked however. No granite, no stainless appliances, no dishwasher or disposal :) I asked the listing agent if he thought I should purchase and include a dishwasher, and he said -' the house is move in ready and shining now. Let's wait and see if the kitchen becomes an issue or if people are willing to update after purchasing as I suspect. If I get feedback that points to the kitchen being a drawback, we'll talk again.' 3 offers from 4 showings in the first 4 days. All were reasonable and we closed in under one month.

dcarch - if you wait for the skins to get tough they actually do store over winter but the skins then are not really edible they get sharp and tough. I have yet to be able to cook down aged skin.

Grainlady - if the skins were soft enough I would have left them on but I have failed in that experiment before. I think I will try drying the skins on their own and grinding them into powder. I actually thought you may have tried this already.

Maybe it is a thing of the north to let your zukes grow tough for winter coldroom storage.
