Hi everyone,
This Saturday's workday edibles from me will be some Corn Chowder and another batch of Orange Lemonade. I'll be making a double batch of the chowder to make sure there's enough. I'm going to make both the chowder and lemonade the night before and getting some mushrooms, celery and maybe an orange and red Bell pepper for some color.
Here is the recipe (I will be doubling this for Saturday).
Supper Corn Chowder
5 strips bacon
1 med. onion, chopped
2 stalks celery, chopped (I'll be using celery hearts)
2 c. corn (16 oz. can-I have some frozen corn from the cob that was cooked kind of cream style by my other gram-mom's mom)
1 c. diced potatoes (2 to 3 medium-mom has 6 red potatoes I can use)
1 10 1/2 oz. can cream of mushroom soup
2 1/2 c. milk
Pepper to taste
Add cooked potatoes, corn, milk, and soup. Heat but do not boil. Add pepper. Cook bacon until crisp. Save 3 tablespoons bacon grease. Saute onion and celery until lightly browned (mushrooms and green pepper, optional). Add to soup. Top each bowl with crumbled bacon.
I'm just going to add the bacon to the soup after it's fried and chopped. I'll be using pepper bacon, so it'll be nice and seasoned :-).
