Tweaking honey muffin recipe

I read honey, oats, bananas, almonds and cherries all help you sleep, so I decided to try and concoct a nightcap muffin recipe. I made these today and they were pretty good, but they burned on the outside probably due to the honey. But I liked the flavor and texture. Found the recipe on the Internet.

Ingredients

1 cup flour

1 cup quick one minute oats

1/8 cup wheat germ (optional) (I used oat bran)

1 1/2 teaspoon baking powder

1/4 teaspoon salt

3/4 cup milk (I was out so I used soy milk)

1/3 cup honey

1/4 cup vegetable oil

1/2 cup peanut butter (I used 1/3 cup almond butter)

1 beaten egg

1 teaspoon vanilla extract

2 mashed ripe bananas

1/8 teaspoon cinnamon

1 teaspoon of brown sugar

How to make it

-----------------------------------------------------------Preheat oven to 400�F, and line cupcake pan with paper liners.

In one bowl, combine the flour, oats, baking powder, salt, cinnamon, and wheat germ if using.

In a second bowl, combine egg, honey, milk, vegetable oil, peanut butter, vanilla extract, and bananas.

Add the second bowl to the first, stirring until just moistened.

Distribute evenly among the cups.

Sprinkle tops with brown sugar.

Bake 20-25 min.

Any way I could tweak it so it doesn't burn? Less baking time would mean not done in the middle.

Bake at 375?

Forgo honey all together?

Use half honey and half sugar?

Make smaller muffins?

I had to cut the bottoms off all the muffins--not real aesthetic, lol!
