I like the picture frame effect on the oxtails/squash.

I think this has been asked before, but what do you typically stuff your wings with?

It is the tomato picture that I like.

Is your whole life as orderly as your food? I want to see a picture of your closet. Bet everything is lined up in order of color. The "squash frame" photo is quite amazing.

I don't think I've ever had the opportunity to describe ox tail as "rococo" before! :) Do people fight over the corner squash like kids with a birthday cake?

What's the dark stripe with the tomatoes?

They're all very pretty, and appetizing, but the wings are the ones crying, "Eat me!"

I would be so sad to see the plates after everyone had been served. :(

We just came back from a wonderful time in Napa (Valley), CA, where we ate at two of our favorite places: Auberge du Soleil in Rutherford, and Etoile @Domaine Chandon winery, Yountville.

Your food is more beautifully presented than either one, and I'm sure it tastes as good as it looks! Simply gorgeous, as always!

I had a rogue tomato plant show up in the garden this year and decided to keep it -- I grow OP heirlooms so knew it would most likely be good. It turned out to be Black Cherry and I'm so happy since I didn't plant that variety this year. lol!

The stuffing - I basically cheated. I had some Italian sausages I needed to use up, and some leftover store bought turkey stuffing, chopped them up with a little onion, stuffed the wings and baked.

The ox tail - was easy. Simple stewed. I had one Peter Pan squash with a worm hole that I had to cut away, so I cut the rest of the squashes for the plating idea.

The tomato salad - started out with lining up the slices of the Black Krim tomato and cut thu the middle all at once to save time. Then push the cut slices with the knife and sliced a ChcukâÂÂs Yellow the same way. Made some room for the black garlic dressing in a mayonnaise squeeze bottle in the middle. About two minutes of prep time.

My closets? - You will think the âÂÂBig Bangâ just happened a second ago. :-)

dcarch - I just tried to debone a half dozen or so chicken wings. I figured there must be a method so I watched this video and this one. I wish it was that easy - particularly the second one. I guess I did a hybrid of the two and only really mangled one but felt I spent way too much time on them. The last one actually went pretty well, but being as it was the last one I don't know if I was on to something or if it was luck.

Anyway, just wondering if your method varies greatly from either of these, or if I just need more practice. Feel free to make a video in your spare time. ;-)

FOAS, The second video is basically the method that I used.

Keep this in mind:

When you buy wings, the whole package is either left wings or right wiings. No mixed wings.

What makes that method work is basically when you crack the join to pull out the double bones, it makes a difference if you crack towards the right or left.

I don't remember which way is the way for right wings or left wings. You will have to try it out.
