The first photo looks like an Ebelskiver pan for filled pancakes. I don't know about the second.

My daughter got an Ebelskiver pan for Christmas last year. She has me make them often. I have to admit they are good.

Yes, that is an Ebelskiver pan. There used to be a breakfast spot on McHenry called Encore, which may have been called Etude many more years ago, that served Ebelskiers. I think the new place that is there, Mediterranean Grill, inherited the pans and also serves Ebelskivers now. They are a ball-shaped pancake of sorts.

The other seems to be a steamer/pasta pot with two inserts, the deep one for pasta so you can lift it out of the water, and the shallow one for veggies, etc., over the water.

Ebelskivers often have some sort of filling in the middle; I've done cooked and sweetened apple filling when doing demos at a gourmet store when I worked there years ago. And powdered sugar is sprinkled on top of each.

I found the first one at Good Will a little while ago. Just HAD to have it to add to my cast iron collection. Have pretty much all the "regular" CI items, except a deep "chicken frying" skillet, so was glad to find this kinda unusual piece. Admit that I haven't used it yet?? Guess waiting for a good recipe. My understanding is the product is sorta of a cross between a pancake and a doughnut??

Rachelellen, There are a number of Youtube videos showing how to use your Ebelskiver pan. Here is a link to one of those videos. I need some hint on filling them as I failed filling. I should have know to ask Teresa for hints.

Oddly enough I saw cast iron Ebelskiver pans at the Asian store on Roseburg and Carver that we discussed on another thread. I made a mental note to go back and get one as they were only 12 dollars or so. I wonder what Asian yummy might be prepared in that pan. Maybe they were shipped by mistake and they just kept them. Heavy stuff to return.

I have a vintage Griswold cast iron Ebelskiver. Thanks for the reminder. I need to use that pan more often.

Yum, those Ebelskiver sound terrific...like a jelly doughnut without the deep frying! Gonna have to try that.

I know there is a Japanese Takoyaki pan that looks much like it, only the wells are smaller...closer to the size of a Tablespoon. The method is similar as well. A batter is spooned into the wells of a very hot pan, sliced octopus is added for the filling, and the batter is turned over using a skewer. The result is tender little puffs filled with octopus, which are served with dipping sauces of various kinds.

I will try the sweet Ebelskiver for breakfast some morning (my husband will be overjoyed) but I'm already thinking about savory variations to try.

That makes sense about the steamer pot. I never steam veggies in that way, and I've been boiling pasta in a pot and dumping it into a colander my whole life, so didn't even think of that either. Well, I'll try it and see if it makes anything easier or more convenient. Otherwise, it's off with it as my kitchen cabinets are getting too crowded again!

Video is definitely the way to learn how to make ebelskiver (or abelskiver or aebelskiver). As Cathy said, youtube has a number of them. I think this one shows the turning process especially well. And Arne's Danish accent lends authenticity. :-) Raspberry jam is a traditional topping.

Rachelellen, if you don't use the pot for pasta or vegetable steaming, it makes a great way to dip peaches or tomatoes into boiling water for peeling, just pull the pan insert out and set it right into the sink full of cold water. No fishing tomatoes out with a slotted spoon, which is how I used to do it.

It seems I recall that folks used a sharp knitting needle to spear and turn the aebelskiver. Or is that another food item that I am thinking of????

It is also sometimes spelled "Ebleskiver".
Seems like I sort of remember another,
totally different name for them.
But I don't remember what it was.
