Something With Chanterelles?

A friend brought me two pounds of chanterelle mushrooms, collected from local Oregon woods. SWMBO wants something involving a "chanterelle cream sauce". On Sunday.

Hmm, I've never made, or had, that. She mentioned something about sherry; I generally like Amaretto and/or Tia Maria. Any thoughts about how you'd approach this? Herb-wise, if one uses those, I still have tarragon, thyme, rosemary, chive, sage, basil, and mint in my garden - would any of those be useful?

Now, what to go with the sauce? I thought of veal, which I've not made before. I could use chicken, rabbit, or pork alternatively.

And, sides - for some reason I'm wanting a potato, but what would you like to see?

I'd love ideas and suggestions. Thanks!
