Ways to use underbaked brownies

I baked a big pan of brownies to take with us on a road trip. Long story short: they turned out slightly under-baked like gooey fudge near the center of the pan, and just right around the edges of the pan.

Now, I like gooey brownies and fudge, but they didn't seem right so decided not to take them. Instead, I cut them into individual brownies and put them in a Tupperware container in the freezer.

I'm wondering how I can use them. So far my idea is cutting them into small pieces (the size of small marshmallows) and mixing them into an ice cream dessert.

Any other ideas?

I do not understand any problem.

Put in bowl, add vanilla ice cream and chocolate syrup, all gone!

I might use them to make what my girls called "Death by Chocolate". It's just a layer of brownies, crumbled or diced, topped with a layer of chocolate pudding, then a layer of whipped cream, then a couple of chopped candy bars of your choice, ours is usually Heath Bars or Snickers. We do two layers of each ingredient, ending with the chopped candy on top. If you put it in a clear bowl you can see the layers.

It would probably also make a good Hot Fudge Brownie Sundae, just top with a scoop of ice cream, your choice of flavor, some hot fudge or other topping and whipped cream if you like. The ice cream will make the brownie soggy anyway...

I got this one years ago off the side of a Betty Crocker Supreme Brownie mix. It's really good and I make it regularly. OATMEAL BROWNIES 2-1/2 cups oatmeal, uncooked 3/4 cup all-purpose flour 3/4 cup packed light brown sugar 1/2 tsp. baking soda 3/4 cup butter, melted 1 pkg. brownie mix + ingredients needed on box 1/2 cup chopped nuts Heat oven to 350Â° F. Grease bottom only of 13- x 9- x 2-inch baking pan. Mix oats, flour, brown sugar, and baking soda; stir in margarine. Reserve 1 cup of the oat mixture. Press remaining oat mixture in prepared pan. Bake 10 minutes; cool 5 minutes. Prepare brownies as directed on package; stir in nuts. Spread over baked oat layer; sprinkle with reserved oat mixture. Bake 35-40 minutes; cool. Cut into bars. Yield: 48 brownies.

I've made this recipe many, many times. They are really good. I often add Christmas sprinkles and give them as gifts around the holidays because they cut really nice and work well in those waxed treat bags. Chocolate Chip Brownies (from Taste of Home GrandmaÃ¢ÂÂs Favorites) 1 cup butter, softened 3 cups sugar 6 eggs 1 tablespoon vanilla extract 2 ÃÂ¼ cups all-purpose flour ÃÂ½ cup baking cocoa 1 teaspoon baking powder ÃÂ½ teaspoon salt 1 cup (6 ounces) semisweet chocolate chips 1 cup (6 ounces) vanilla or white chips (I usually don't use any white chocolate chips - I just add more of the semi-sweet chips or use milk chocolate chips if I have them) 1 cup chopped walnuts (I don't add these since we are nut-free but they would be great) In a mixing bowl, cream butter and sugar. Add eggs and vanilla; mix well. Combine flour, cocoa, baking powder and salt; stir into creamed mixture just until blended (do not overmix). Pour into two greased 9-in. square baking pans. Sprinkle with chocolate and vanilla chips and nuts. Bake at 350 degrees for 35-40 minutes or until a toothpick inserted near the center comes out clean. Cool. Yield 3-4 dozen.

I have had this pan for over a year. I use it all the time. It is NOT difficult to clean or use. Spray cooking spray on the top of the pan as well as the insides to keep batter from sticking if you get it on the rims when pouring it in. You'll have to reduce cooking time. All that metal, the brownies cook faster. It's trial and error, really. May want to reduce temp a bit (25 degrees), reduce time at least 10 minutes...then add baking time if necessary. The pan is heavy, but by no means is it unwieldly. It is very easy to clean if prepped with cooking spray. I put mine in the DW. Storage hasn't been an issue either. For the edge lovers, this pan rocks!

Your problem may be caused by several things...or a combination of them. Since you use the same recipe with different results, I would first suspect your oven temperature. The preheated oven... The magical "beep" when your oven has reached temperature might not be THE temperature at all. You may want to place an oven thermometer inside and do a little checking. Flour, no matter how carefully you measure it, has enough variation in the moisture and gluten levels from bag-to-bag and brand-to-brand that it can change the recipe. Flour measurements are only a good guess no matter how exacting your measurements. You can't measure moisture or gluten by-the-cup. There are no standards by which measuring cups are manufactured, so if you change from one set of measuring cups to another, you may have more or less flour because of size differences. Mixing... In brownies, you don't want a lot of gluten-development. Mix your ingredients by hand or with a hand-held mixer on low EXCEPT for the flour addition, which is folded in by hand with a rubber spatula at the end of mixing. The gentle mixing prevents too much gluten from forming, and too much air from being beaten into the batter. EGGS - were they cold from the refrigerator, or room temperature? It's interesting how this one thing can make a HUGE difference in baked goods. Room temperature is best for baking. Another important ingredient, which may be the culprit in conjunction with cold eggs, is sugar. The sugar in the recipe raises the temperature at which egg proteins set. The proper temperature is essential for the egg proteins to coagulate slowly where they blend with other ingredients. The structure of brownies is determined from ingredients other than the flour because there is so little flour used in brownies. If your oven temperature wasn't high enough, all these things can come together to make those wet brownies. Hope there is something in there that will help you out. -Grainlady

The thing is, we don't eat much sugar anymore except for special occasions. So, the frozen brownies will remain frozen until I can whip up something special for the next special occasion. Is there such a thing as a bread-pudding type dessert using brownies instead of bread?

Jenn, how about this recipe using your brownies instead of the pecan pie? I made it for a quickie dessert a couple of weeks ago and had 3 guest requesting seconds on dessert. I think it would work nicely with brownies.

If they have eggs in them, as most brownies do--then you definitely don't want to use them in a way that they'd be served to the very young or very old or anyone with a compromised immune system. Food poisoning from raw or undercooked eggs is no joke (lost a week of my life to it once). Remember--freezing DOES NOT kill bacteria--how do you think labs preserve it for future experiments?

Personally? I'd toss them, and not take chance anyone becoming ill from the eggs that aren't thoroughly cooked.

Jenn, you certainly can use the brownies in bread pudding.
I'm a part time baker for a little gourmet food shop. Occasionlly we'll overbake something or a recipe won't come out just right, so we'll use it to replace some of the bread in our bread pudding recipe. Our "mistakes" have produced some of our best treats.

azzalea: I understand your concern especially in light of your experience. However, these brownies weren't that under-baked; the ones in the middle of the pan were just a little too gooey/fudgey and we didn't think they would be presentable to some. We were planning to take them on a road trip to present to a family we were visiting there.

I Googled and found lots of brownie bread pudding recipes.

I had a suggestion, but Annie's was much better than
mine, but it was somewhat 'similar'.
