Raw Beef - got lost in fridge - cook or pitch?

I just found a roast in the fridge that is about a week out of date. When I opened it, it did not smell putrid, but it did smell "off," not like fresh beef. It had a very slightly sulfury smell - only detectable when my nose was an inch or so from the surface.

BIL suggested that I cut off all of the surfaces like they do with aged beef.

Should I just pitch it and chalk it up to needing to organize my fridge better?
