Coconut Oil Revisited...

I know this has been discussed before, but I just wanted to report that I made an apple pie using coconut oil today and the crust is awesome. I was hesitant after I'd opened the jar, it was the refined kind and it was oil instead of the solid shortening-like I'd bought before (virgin). And while I was making the dough I thought, oh, this isn't going to be any good. (I'd always used shortening or lard before.) I just thought that the crust wouldn't be flaky without the solid lumps in it. But it is flaky and tastes wonderful. I haven't cut a piece yet, only snitched some off the top, so hopefully the bottom crust will be good, too. I made biscuits with the virgin kind and they came out wonderful, also.
