Easy tomato sauce if ---

you have a Vitamix!

I use the whole tomato (I do take out the end). Just quarter them and put them in the Vitamix seeds/skins and all. Puree and reduce to about half or even one third if they are real juicy. I can this without adding anything at all except a little lemon juice.

You can also use a food processor but I'm not sure the skins would be completely pureed --- haven't tried it. I do have a 'Ninja' and know it doesn't work as well in that. The Vitamix is expensive for a reason!

BTW, I also make applesauce the same way with the skins but I remove the core and seeds. (Seeds of apples are not edible.)
