Fresh Apricot Recipes?

After waiting for three years, our neighbor's apricot trees are producing a bounty of beautiful fruit. We've had our fill of eating them plain and would like to start using them more creatively. There are hundreds of recipes for dried and stewed dried apricots out there but not too many for fresh ones.

I did make a couple of apricot custard pies last week, substituting apricots for the peaches in the original recipe and they turned out fine but I'm wondering if you have any favorite recipes using fresh apricots.

They're smaller than they look in the picture, only about an inch and a half in diameter, although I doubt that would affect most recipes.

I see there's another difference. The Bergeron Apricot recipe has an 8-hour first maceration, then another overnight one. The apricot-vanilla recipe has a 1-hour first maceration. That's what I was planning on tonight. I can't extend this to Thursday, since it's going to be 102 then. Only 95 tomorrow. LOL. I have some Fruit-Fresh and may just freeze some of them... But I'm never as happy with that as with good home-made apricot jam.

I made the apricot salsa using the KatieC's recipe for Peach Salsa. I just subbed the apricots for the peaches. It looks so pretty!! We tasted some before canning it up and it was yummy. Substituting fresh apricots for dried - need quick help!

I'd probably use about 6 to 7 cups of fresh apricots,2 Tbs. to 1/4 cup of orange juice and the grated rind of 1/2 an orange. It sounds like it would be delicious. It's hard to find recipes for fresh apricots but here's one I've made before: APRICOT FOOL 3 cups peeled and mashed apricots 1/4 cup Triple Sec or other orange-flavored liquer 1 cup whipping cream 2 Tbs. sugar Grated rind of 1 lemon 1/2 (1-ounce) square semisweet chocolate Combine apricots, liquer and lemon rind in a large bowl; stir well. Beat the whipping cream until foamy; gradually add sugar, beating until soft peaks form. Fold sweetened whipped cream into apricot mixture. Spoon into 6 stemmed glasses. Lightly grate chocolate over the top of each serving. 6 servings

This is way too late for this year but maybe for next year . . . . . . . . (I was thinking apricots could be subbed) FOR THE MANGO SALSA: (emerril lagasse) 1 1/2 cups (1/2-inch) diced mango 1/2 cup small diced red bell pepper 1/3 cup finely chopped red onion 2 Tbsp rice wine vinegar 1 Tbsp lime juice 1 Tbsp minced jalapeno 1 Tbsp chopped fresh cilantro leaves 2 tsp minced ginger 1 tsp minced garlic Salt and freshly ground black pepper Place all the ingredients in a non-reactive medium bowl and stir to blend. Cover with plastic wrap and allow salsa to macerate at room temp. 30-45 min. Remove the plastic wrap and serve with the tenderloins. I make this with fresh apricots (see note at bottom).
I envy you fresh apricots!

Quick Apricot Bread (Joy of Cooking)

1/4 c. shortening
1/2 c. sugar
1 egg
3/4 c. unsweetened, cooked, mashed
prune, apricot or cranberry pulp **
1/4 c. juice to match **
1 1/2 c. flour
1/2 tsp. salt
1 tsp. soda
1 c. buttermilk
1 c. broken nut meats
grated rind of 1 orange

preheat oven to 350 degrees; grease loaf pan.
Cream shortening; beat in sugar; beat in egg.
Mix in pulp & juice.
Sift dry ingredients & add alternately with buttermilk.
Stir in nuts & rind.
Bake for 1 1/4 hrs.

note:
** substitute about 10 vy ripe apricots pureed (1 c.) for pulp & juice.

doubed recipe makes 1 lg. loaf & 2 small (45 min. cooking time for small loaves)

Ruthanna, there is a great source of apricots fairly near you, but the apricots are over now. I was so excited when I found it, because my old source disappeared years ago. It's County Line Orchard in Kempton, actually closer to you than to me.

CC, I'm familiar with County Line. We just passed it a couple of weeks ago on our way to dinner at the Stony Run Hotel. I think they also sell at the Thursday after-work (4-7 P.M.) market at Macungie Park.

Next time you need something from there, let me know and I'll run up and get it and meet you at Echo Hill, which should be about in the middle of where we both live.

It's just another one of those shabby country hotels but this one has an Austrian chef and very good but not overly heavy German food. My favorite is their made-to-order tenderloin tips sandwich but it's only available on week nights; not weekends.

Mmm....beautiful. I'd make jam now, and then long about February enjoy the taste of summer. Beautiful golden jam.

I'm sure there's plenty of recipes for apricot and something else jam, too. What fun.

I made the little apricot cakes yesterday. They were a delicately textured tea cake. I followed the recipe as printed except for adding a scant 1/8 tsp. of almond extract to intensify the vanilla flavor.

Mom, our neighborhood has a sort of co-op to share our talents in addition to foods we grow. One woman already made and distributed apricot preserves and apricot-red raspberry jam so I took her some of the cakes and she pronounced them to be "queenly".

Oh, I'm glad you tried them, Ruthanna. They do look good. I have tea every day and they'd be perfect for it. I didn't make them because I got my apricots in the horrible hot weather. We didn't get many and we just ate them.
By the way, County Line Orchard also has very good blueberries.

Ruthanna, do you like Pluots? I love the Raspberry Jewel but they're scarce here. More plum than apricot. My Peapod is offering them this week so I got half a dozen to eat out-of-hand. Yum!
