Freezing sweet corn -- KISS

In an earlier post, I told how I freeze sweet corn --- just picked in the husks and into a gallon zip lock (four to a bag). Well, many of you think it must be cleaned and blanched, maybe because you need to feel you did something.

As we were putting away the new baggies of sweet corn into the freezer, we found two bags of 2007 sweet corn that were behind a box of shredded cheese in one of our freezers. Several months ago, we were without power for four days and most all of the stuff in that freezer thawed, but some things weren't damaged (the cheese). We figured it was just us for lunch and we should try out the old corn that must have major freezer burn.

NOT!!! It was absolutely great. The husks and silk must have protected it -- it was sweet and crunchy and I wonder if it didn't taste any less than what we had just picked and frozen.

So, if you must try to clean and blanch, just try a few ears my way. Life is way too short to go through lots of extra steps that don't give benefits.
