Carol,

I've made Annie's small batch Habanero Gold before but wanted to do the large batch this year.

It's sitting right now so I have lots of time but before I do it up I wanted to check to make sure I hadn't copied the recipe wrong.

The small batch calls for one pouch of pectin and my copy of the large batch also calls for one 3 oz pouch. Is that correct, same amount of pectin for small and large batches or did I copy it wrong.....

No, you didn't copy it wrong. A couple of years ago Annie and I were talking about the original recipe and the expense of such a small batch calling for the liquid pectin. That's also a labor-intensive jelly.

Since I'm cheap, LOL, I said I was going to try to come up with a way to double the yield with the same amount of pectin. That recipe is the result.

I also increased the dried apricots, because I like them, but it does mean more particles are held in suspension so the finished product is ever-so-slightly less "clear" than the original recipe.

The recipe still falls within the original guidelines for safety as far as the onions and peppers are concerned.

Have fun making the jelly. It's far too early for habaneros here, not to mention the thunderstorms and the drenching rain!

Got it! Thanks Carol! Should be ready to can right about dinner time which means a good excuse for ordering in! LOL

cabrita - First, please take this from my memory - as it was almost a year or so ago, and only a first experience, so at best is hazy. I extracted the juice, then cut the peelings from the limes, and added water boiling about half hour or so. Then I put into a cheese cloth bag, and extracted as much liquid as I could. The pectin is in the pulp mostly. This pectin extract was frozen for later use. When I made the jelly, I had about a cup of pectin, to which I added enough fresh squeezed lime juice to make about 4 cups of juice/pectin mixture. I found a recipe that called for 2 cups sugar to 2-1/2 cups fruit mixture. Bring to a boil until a thermometer reaches 212 F. Pour into jars, 1/4 in. headspace. Process 5 minutes. Don't let the mix over-cook as the pectin will break down. The jelly won't be green, but a light amber color. I checked my finished jars this a.m. Found that one didn't seal, but I used some old lids, all the others were fine. It made about 6 jars and it is a bit runny, but that's fine cuz it soaks into the English muffin holes better. I would imagine that you could use more pectin if you wanted a thicker product, or even add more commercial stuff. But, I think it is hard to predict the outcome of this kind of jelly making, not knowing exactly how much pectin is in the fruit to begin with. Apple peelings are another good source of pectin, the young green ones especially - having more pectin in the peels than riper ones. Sooo - the choice is yours. This is not an exact recipe, but I found the taste to be excellent, not compromised by a gelling product that adds its own character to it. Just my 2 c's. Bejay

Sure. These are my own notes, so I left out instructions for some of the steps. If you need additional information, just let me know. The reason these preserves work so beautifully is you prepare currant juice and use that as a base in which the raspberries float. It's a Madelaine Bullwinkel recipe. Her methods are unique (also a pain) but they make lower-sugar no-commercial-pectin preserves possible. I've posted another of her recipes here before, one a lot of members liked, for spiced blueberry preserves. It's a winner too. Raspberry Red Currant Preserves Categories : Canning & Preserving Jams & Jellies Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups red currant juice -- (strained from 2 1/2 pounds) 2 pounds raspberries 3 tablespoons lemon juice -- divided 3 1/4 cups sugar -- divided Extract juice from currants. (Do not heat currants with stems; juice will have a "grassy" flavor.) Combine raspberries and currant juice in an 8-quart non-reactive pan. Cover and bring to a boil. Uncover and simmer 10 minutes. Strain juices for 15 minutes. Reserve berries. Measure the juice and either reduce or add water to measure 3 cups. Add 2 tablespoons lemon juice to the strained fruit juices in a clean 8-quart pan. Cover and bring to a boil. Uncover and add 3 cups sugar, 1/2 cup at a time, allowing liquid to ragain a boil each time before adding more. Cook to the jell point. This will happen within 5 minutes. Stir reserved berries into the hot jelly and steep 15 minutes. Add remaining tablespoon of lemon juice. Cover pan and bring to a boil. Uncover and stir in remaining 1/4 cup sugar. Keep at a boil until jell temp is restored, about 5 minutes. Pour preserves into a 2-quart glass measure. Let preserves sit for 5 minutes, stirring occasionally to redistribute the berries. I'm another non-fan of Pomona's for the reason Robin mentioned, but it does have its advocates and only you can decide which camp you fall into. Non-commercial pectin jams use less sugar than commercial pectin jams but a certain amount of sugar is necessary to assure a jell. It's a fine balance of fruit, sugar and acid. Cutting the sugar is possible but at some point the mixture will either not jell or you'll evaporate out the water and end up with a thick viscous mixture like tar. Annie routinely reduces the sugar in something like pear preserves; with each batch she reduced more until she hit a point where it wasn't possible to further reduce and get even a soft set. But since each batch of fruit varies (especially from season to season) with traditional preserving there's always an element of "mystery" as to how the preserves will respond. You can improve the odds by adding citrus pulp and seeds, as Robin mentioned. You can also make your own natural citrus or apple pectin base. And yes, you can definitely experiment with assurance of safety as long as you avoid the low-acid peppers and such. You can do a simple (and cheap) alcohol test to determine the pectin level of the fruit in any given batch. I usually don't bother unless I'm developing a new recipe and working with fruit that has marginal pectin. A search online will bring up lots of sites that explain how to do it, but you can also ask here if you're interested. You can also get a refractometer or jelmeter, which will help you measure the sugar in the fruit. Knowing the level of natural sugar helps you determine how much additional sugar is needed. Jelmeters are no longer manufactured, though Jamlady mentions them. But they do occasionally turn up on ebay. They were in common use during WWII because women making preserves could then reduce the sugar. Lee Valley Tools sells a refractometer. Jessy, that is one of my favorite lines, but I did have to chuckle. All I could think is "Thank G*D my dad wasn't as disturbed as Hamlet!" Thank you everyone. Words cannot express my appreciation. Funeral Friday, weekend spent moving everything out of my father's studio at the retirement center. Some to the dump. (You could say my father's beloved old recliner had "character", but it's hard to imagine anyone else wanting to adopt it. About as appealing as an aged smelly dog.) Some to GoodWill and a lot to my niece and nephews whose apartments are sparsely furnished. It's always amazing the discoveries you make. I found a letter my father had written while in the army (WWII). Just a friendly letter; I'm not sure why he never sent it. But being a devoted Roman Catholic, he'd vowed during Easter week to attend mass every evening. On Wednesday he went to mass, got halfway through the service and realized, GASP!, he was with the Episcopalians! That made him feel very strange. I got a good laugh out of that one. The oddest discovery was in a little pile of my mother's silk hankies. 1930's vintage, from the days when every lady carried a decorative handkerchief. It's hard to imagine one ever making actual contact with a human nose. I found a delicate hankie with a border of Union Jacks and a silkscreen image of Edward VIII. (You know, the king who gave up his kingdom for the woman he loved - Wallis Simpson). Well, my mother grew up in the booming metropolis of Willow Bunch, Saskatchewan. How and why she would ever have acquired such a commemorative I can't imagine, especially as her family was French-speaking. But it's an intriguing oddity to contemplate. That went to my nephew's British girlfriend. Her father in Hertfordshire will be thrilled. The thing that strikes me is how much we are mysteries to others, even those nearest and dearest. Hi Peggy. I'm not sure what you're asking. Did you dry habanero peppers and need to know how to store them? Apricots?

Sure. The recipe has also been posted on Harvest by weight rather than volume at the link I posted below.

Big-Batch Habanero Gold

=======================
1 cup minced dried apricots (1/8" dice)
Note: Could use dried peaches or pears instead.
1-1/4 total cup minced red sweet pepper and minced red onion (1/8" dice), approximately half-and-half.
1/4 cup Habanero peppers
Note: For extra-hot, increase Habaneros to 1/2 cup and reduce red sweet pepper/red onion combination to 1 cup total.
1-1/2 cups white vinegar
6 cups sugar
1 3-ounce pouch liquid pectin

Prep apricots, peppers and onion. Place in a large, stainless or other non-reactive pot. Add sugar and vinegar. Bring to the boil and cook 5 minutes. Pull off the burner; allow to cool, cover and let sit overnight. Stir occasionally if convenient.
Note: 4-6 hours would be plenty, so the time doesn't need to be any greater than the soaking time for apricots in the original recipe.

Next day, bring the mixture back to the boil. Stir in liquid pectin. Boil hard 1 minute. Pull off the heat. If necessary, skim foam. (I did need to skim a bit.) Let cool 2 minutes, stirring to distribute solids.

Pour into jars. Stir to distribute and remove air bubbles. Do the usual with the jars and lids, BWB 10 minutes.
When jars are sealed, "agitate" to distribute solids throughout the jelly. You will find that stirring in the jars reduces the need to "agitate" the jars so much to distribute the solids. If a lid pops while twisting and turning the jar, don't worry. It will re-seal once it gets a chance to rest.
