Zucchini-Pineapple

Thinking about utilizing some of our zucchini bounty by trying this recipe. Seems like a neat way to use up some squash. Wondering if some of you have tried this and what your impressions were and if you have ever gone rogue and substituted crookneck for the zucchini:)

No, I've never tried that, but I love pineapple and think it sounds interesting. That said, a friend with a huge bounty of zucchini asked if I had any zucchini cookie recipes, and when I saw the title of the thread, I though "Hmmmmm might be interesting to add a little drained crushed pineapple" to the cookie recipe I am working on... thanks for the inspiration!

I tried one of those recipes a long, long time ago. Was not impressed; didn't have much of/ enough of a pineapple flavor to suit me. Maybe if there was some way to amp up the p'apple flavor with a very good extract. Or reduce the juice some to concentrate the flavor...or maybe use some frozen concentrate...

Anyway, if you try the recipe, I would love to know how it turns out for you.

oh Flora, what is a Garbanzo or Chick Pea called over there? My friend and I were on the phone and I was teasing him about taking him on an American Vegetable tour when he comes in September. Apparently some veggies are named differently over there. Chick Pea is Chick pea That's right, they have aubergines and courgettes.... egg plant and zuke I remember being in a supermarket in the UK with an American med student and ozzie Physical therapist, and a huge but good natured debate that went on for hours, well into pub time! alcohol help but basically our dispute was courgette in UK, Zuke in USA (can't even spell it) and baby marrow in OZ! American miss out on the greatest of UK fav veg Runner beans which I assumed moving here last year, was a Europian veg, looked it up and found it was native of New England where I am living! the scarlet runner is old fashioned, furry and get tough and stringy quickly, I like polestar smooth not stringy or tough until very old, prolific, and I shudder to tell you where you can get them, incase I can't buy any next year! also people in the know in the UK call broccoli calabrese, but broccoli that is so amazing it ranks with asparagus is purple sprouting broccoli ! I will share but trust me I will be upset if I can't get any, Thompson and Morgan, sold out at the mo on PSB.

Recipe for Mock Apple using zucchini?

Well, here's how I do (I use it in "apple" crisp as I cannot make a decent pie crust to save my life). Start by peeling a zucchini. If you want people to think these are apples, remove all the bits of green peel. Slice in half lengthwise and scoop out the seeds and pulpy center with a spoon. Lay the zucchini cut side down and slice. I use two large zucchinis (about 6 cups? - I don't know. I never measure anything.) Place in a large saucepan and add: 1/2 cup sugar 1 tablespoon cinnamon (or to your taste, but I love cinnamon) or 2 t. apple pie spice about 3/4 cup water 1/4 cup lemon juice Simmer until the slices are tender and the liquid has become syrupy. For a fruit crisp: Take out the slices and put into a 2 qt. baking dish. Keep simmering the syrup until thick. Add 1 tablespoon tapioca if you like it thicker. Dump the syrup over the slices in the baking dish. Sprinkle on your favorite crumb topping. Mine is: 6 tablespoons butter or margarine 1 cup flour (or substitute some oatmeal for part of the flour) 1/2 cup brown sugar 1 teaspoon baking powder 1/2 teaspoon salt Mix until crumbly and sprinkle over the slices. Bake at 350 degrees for about 45 minutes.

Big green beans (1/4 inch dia or so)

OK, I've got just under 3 lbs of these big (some are a little bulgy) beans snapped, rinsed, drained and in the fridge. I have to pick up DD, but I picked these 24 hours ago and want to do something with them when I get home. I decided against the 3-bean salad since I don't have limas, don't like celery, and onions are probably going soft in the basement (I don't care for onions anyway). I don't want all dilly beans, can I snap these shorter like for 3 bean salad, use the dilly bean recipe but instead of dill do a mix of mustard and celery seed, maybe a little sugar to have beans to mix into a 3-bean salad in the future? How much mustard and celery seed to use per pint in place of the 1-2 dill heads (figuring 1-2 tsp dill seed is equivalent to 1 head, I think 1 tsp of each per pint might be good, would 2 tsp or 1 Tbsp each mustard and celery seed be too much)? I think I would end up with 4 pints. Ball uses 1 Tbsp mustard seed and only 1 tsp celery seed (but 2C celery) for 5-6 pints of bean salad. Not sure about the garlic for a 3-bean salad - there isn't any in the Ball recipe. So I think I'll skip it. Ball uses sugar b/c their brine is almost 3/4 vinegar - lots of low-acid veggies in there (onion, pepper, celery, limas). The Dilly Bean recipe is half vinegar so I'm thinking just use ACV and skip the sugar?

I used to make this mock pineapple back when I thought you had to plant the whole packet of seed, lol. I ground it in my old hand-crank meat grinder using the coarse blade and it felt like crushed pineapple in your mouth. If you ate a spoonful plain you'd know it wasn't the real stuff, but it was great in breads. I added pineapple extract to the U of GA recipe...

Zucchini Mock Pineapple

Amount Measure Ingredient -- Preparation Method

4 quarts shredded or cubed zucchini -- * see note
46 oz can unsweetened pineapple juice
1 1/2 cups bottled lemon juice
3 cups sugar
2 teaspoons pineapple extract

Mix ingredients (except pineapple extract) and bring to a boil. Simmer 20 minutes. Stir in extract. Fill hot jars with hot mixture and cooking liquid, leaving 1/2" headspace. Remove air bubbles. Wipe jar rims. Adjust lids. Process in a boiling water bath; pints and half-pints for 15 minutes, 20 min. above 1000 ft., 25 min. above 6000 ft.).

NOTES : Katie's notes: I use the coarse blade on my old hand crank meat grinder. It gives the most crushed-pineapple-like texture. A food processor also works, but the pieces come out sharper.
