Crock pot receipe needed: sweet and sour chicken

I admit I am making this right now and am afraid the new receipe I tried is going to flop. It just looks weird.

So in prep for my big, 8-hours-on-low let-down, I'm wondering who has a recipe for crock pot sweet and sour chicken that they LOVE.

Here's what I used from crockpot.com:

Sweet N' Sour Chicken

Ingredients:

6 chicken breasts

Salt and pepper

1 Tbs cooking oil

1 8-oz can pineapple chunks with juice

Â½ cup cranberry sauce

2 Tbs brown sugar

2 Tbs corn starch

2 Tbs rice vinegar

2 Tbs orange juice

2 Tbs dry sherry

2 Tbs soy sauce

Â¼ tsp ginger

1 green pepper, sliced

Directions:

Mix together ingredients except green pepper. Place in slow cooker. Cover; cook on Low 8-10 hours. Add peppers Â½ hour before serving.

Chicken breasts cooked for 8 hours in a crock pot will be dry ands tringy.
I would mix the sauce ingredients together, with the green pepperand bring to a simmer in a frying pan, then I would brown the chicken breasts in another fry pan or on the grill ...just enough to make grill marks or brown a bit...put into the simmering sauce and cook for 15 to 20 minutes.
Ought to take you maybe 40 minutes all told.

We sometimes (almost every week) make two six quart crock pots filled with stew. We use the usual, potatoes, carrots, onions, celery and throw in garlic, bacon, frozen spinach, etc to add some depth to the flavor. Don't forget the spices and worstershire sauce. But the biggest enhancement is adding about 1/4 of wine approximately one hour before we unplug the crock pot. Not only do we eat stew for dinner that night (family of nine) but my husband and I eat stew for luch for the next five or six days. We pack the stew into Rubbermaid disposable round containers and stack all ten of them (or so) in the fridge. Lunch is easy, delicious and filling all week long. Plus, I feel that the nutrition can't be beat, that meat is swimming in all those lovely vegetables, and since the meat is trimmed the fat is somewhat under control.

This may be one to save for when the kitchen is re-assembled but I just had to share it. It's from W-S so they skew it to fit their tools. Feel free to adapt as desired. Cassoulet Ingredients: 4 lb. boneless pork shoulder, cut into 8 pieces and trimmed of excess fat Kosher salt and freshly ground pepper, to taste 2 Tbs. canola oil 1 cup panko 4 oz. thick-cut bacon, cut crosswise into 1/2-inch strips 4 cups coarsely chopped yellow onions (about 3 medium onions) 2 cups dry white wine, such as Sauvignon Blanc 1/4 cup tomato paste 1 can (35 oz.) peeled Italian plum tomatoes, drained and coarsely chopped 2 cups chicken broth 12 cups cooked Great Northern beans or other small white beans, drained 1 1/2 lb. fresh chorizo sausage, each halved on the bias 1 garlic head, halved crosswise 1/4 cup chopped fresh flat-leaf parsley, plus more for garnish 1 lb. baguette, cut into 1/2-inch-thick slices Extra-virgin olive oil for brushing Coarse sea salt, such as sel gris, for garnish Directions: Season the pork generously with kosher salt and pepper; set aside. In the stovetop-safe insert of a slow cooker over medium-high heat, combine the canola oil and panko. Cook, stirring constantly, until the panko is toasted and golden, 4 to 6 minutes. Transfer the panko to a baking sheet and season with kosher salt and pepper. Add the bacon to the insert and cook until crisp on both sides, about 5 minutes. Drain on paper towels. Fold in the panko and the 1/4 cup parsley. Adjust the seasonings with kosher salt and pepper. Position a rack in the lower third of an oven and preheat the broiler. Brush the baguette slices with olive oil. Arrange the slices, oiled side up, on top of the cassoulet, overlapping them. Broil until golden brown, 4 to 6 minutes. Let the cassoulet stand at room temperature for about 30 minutes before serving. Sprinkle each serving with the reserved bacon, sea salt and parsley. Serves 8 to 10. Here are two that are tried-and-true that we like very much! Shredded Beef Fajitas (Serves 3-4) 20 (1Â½-inch) cubes sirloin OR 1Â½ lbs boneless beef chuck) Â¾ cup medium-hot salsa sauce 2 garlic cloves, minced 1 Tbsp dark brown sugar, packed 1 Tbsp soya sauce Â¼ cup fresh cilantro (optional) 1 Tbsp fresh lime juice (optional) Put everything in crock pot and cook on High for 4-5 hours or on Low for 8 hours. Shred meat with forks and return to sauce; cook on Low for 20-30 minutes for meat to soak up the sauce. Stir in cilantro and lime juice, if using. Serve on small soft corn tortillas with toppings of your choice (shredded lettuce, sour cream, roasted peppers, Spanish rice, etc). ********************************** Sirloin Roast 2-3 lb sirloin tip roast 2-3 garlic cloves, quartered 2-3 tsp dried oregano 1Â½ tsp powdered thyme Black pepper, to taste 2-3 Tbsp dry onion soup mix Â½ cup medium-bodied dry red wine 1Â½ cups beef broth, divided With a knife, make holes in roast and insert garlic clove quarters in each hole. Rub oregano, thyme, and a little pepper all over the roast. Let sit in refrigerator overnight. Let roast come to room temperature for at least 30 minutes. In a skillet, brown roast on all sides; transfer to slow cooker. Pour Â½ cup beef broth into skillet and scrape up all the browned bits; pour into crockpot. Sharing a favorite Thanksgiving Recipe... Posted by babblingbetty in 2003 Dressing has never been the same at our house! Get lots of request for the recipe....if you don't have a Crock Pot...it bakes up nicely in a 9X13 pan...just be careful not to overbake...remembering there really isn't a lot to cook...because if you were real smart...you cooked the eggs in the cornbread when it was baking! This is a very moist dressing...just in case you prefer a dry one...my family says yuck to dry dressing! This is a family favorite....so good and so easy! Gives you time to sit and visit a while with your family. Notice #1 calls for celery...my family does not care for celery so I use #2 Crockpot Cornbread Dressing #1 Cornbread Dressing 1 cornbread, 8 inch pan 8 slices day old bread, toasted and cubed 4 eggs 1 medium onion 1/2 cup chopped celery 1 tsp. poultry seasoning 1/2 tsp. black pepper 2 cans cream of chicken soup 2 Tbsp butter Lightly grease crock pot. Crumble cornbread into mixer bowl. Add all ingredients except butter. Pour mixture into crock pot. Dot top with butter. Cook on high 2 hours or on low 3-4 hours. __________________________________________________ Crockpot Dressing #2 1 (8 inch) pan cornbread 8 slices dry white bread 4 eggs 2 c. chicken broth 2 cans cream of chicken soup 1 tsp. sage 1/2 tsp. black pepper Celery to taste 1 med. onion 2 tbsp. butter Mix ingredients except butter. This sounds like a recipe for disaster. Lindac's idea sounds good. Make the sauce-brown the chicken until about 75% done and then simmer in sauce for a few minutes.Chicken breast takes very little time to cook especially if they are boneless.

I make sweet and sour chicken in the crockpot all the time. I don't think it will necessarily be a flop. Here are some tips for success - use all thighs or a mix of breasts and thighs--not the super-size breasts. Brown the meat first before putting in the crockpot. Don't cook for 8-10 hours, cook on low for 4-5 hours. I always start the dish on high til it gets up to temp and then turn down to low. Do not put the green peppers in the crockpot, green peppers turn bitter when slow cooked. Saute the green peppers in some canola or soy oil and add them before serving the chicken. Don't add the cornstarch at the start. When the chicken is done, take it out and add the cornstarch to thicken the sauce. I usually pour all the sauce ingredients of the crockpot into my braising pan to thicken with cornstarch. Then I add the chicken back in and serve the whole dish from the braising pan--I like it for presentation. I serve over brown rice--yum!

These tips work with all my crockpot chicken recipes--moroccan chicken and chicken cacciatore too. I get raves when I serve these dishes to guests, which is something I wasn't expecting for me preparing meat dishes since I am usually vegetarian when cooking for myself. The tips came from the Cooks Illustrated/America's Test Kitchen Cover and Bake Cookbook.

Update

When I got home from work it smelled pretty good in the house! The sauce (which had been a white color due to the corn starch) was brown and the chicken breasts were done through (they were fork tender). There was a lot of juice from the sauces and I did use a 20 oz can of pineapple but only added the juice and not the pineapple itself. I tasted it and then decided it needed more ginger. I added the green pepper and the actual pineapple chunks and set it to keep warm. I think it actually turned out ok, not FANTASTIC serve-it-to-company but better than a flop!

I work and so cooking on high and then turning it down to low, or pre cooking it before I start is not often possible. I'm trying to find recipes that are start to finish done when I walk in the door. I have fantastic luck with pulled pork bbq (I just add the shoulder roast, cover with water and turn to low for 8 hours) and taco chicken (chicken pieces, can of balck beans, taco seasonings and salsa). Those kind of recipes are great for me.

So not a flop, not cordon bleu, but a lot better than I thought at 9am this morning!

Yeah, I usually do my chicken crockpotting on weekends, lol! But there's nothing like coming home to the smell and reality of a flavorful hot meal ready for you when you get home from work, IMHO!
Have you tried Opkikid's Shredded Beef? That's one of my all time favorites.

Slow Cooker Shredded Beef Tacos
1 1/2 pounds boneless beef chuck, cut into 3/4-inch cubes
3/4 cup bottled chunky medium-hot salsa
2 tablespoons chopped garlic
1 tablespoon (packed) dark brown sugar
1 tablespoon soy sauce
1/4 cup chopped fresh cilantro (optional)
1 tablespoon fresh lime juice (optional)
Combine the salsa, brown sugar and soy sauce and pour over the meat in the slow cooker insert. Cover and cook for 8 hours on LOW or 5 to 6 hours on HIGH, or until the meat is fork-tender. Shred the meat with two forks and stir in cilantro and lime juice if using.
Set out taco shells (I like small soft corn tortillas) and all the fixings.

If you like sweet and sour, you should try this next time - its really good. (I have one of those new FAST/HOT crock pots so I always cook everything on low.)

Crock Pot Lemon Chicken

3# chicken pieces, dredged in seasoned flour (we like chicken thighs and I add a pinch of 5-spice powder to the flour, along with a little salt & pepper)
brown the chicken in a skillet (I usually skip that)
mix together in a crock pot:

6 oz can of lemonade
1 tsp balsamic vinegar
3 T brown sugar
3 T catsup
add the chicken and cook on high for 3 to 4 hours

I have a new crockpot (my 30 year old Rival bit the dust!) and I tried this today. Very easy and very good.

Crockpot Jambalya

4 chicken breasts, cut up
1 lg. onion, chopped
2 cloves garlic, minced
2 large carrots, sliced
2 cans diced Roma tomatos with juice (28 oz total)
oregano, basil, salt, pepper to taste.

Put all in pot and cook on low 5 hours. Add 1 lb cooked shrimp and 3 c. cooked brown rice. Cook another 15 minutes.

Too late to be helpful - but here is my 2Â¢ worth ....

I brown chicken first - and cook till nearly done - in electric fry pan

Sauce is made of minced garlic, vinegar, brown sugar, soy sauce

Pour sauce over chicken and cook slowly to allow thickening to happen - no need for corn starch.

If doing wings: it is less than a hour from start to finish
