blanching sweet corn

My question is...... recently I was going to blanch some sweet corn. My friend which is a farmer said the sweet corn he has this year is the best he has had for over 10 yrs. So I took the husk off but left the corn cobs sitting on the counter uncovered from 10am to 7pm before I was able to cook them. In that amount of time can sweet corn become just regular corn? No sweetnees to it at all? I've tried the corn after cooking in and it really tastes like just regular corn. Can it spoil if left out uncovered?
