| Hi everyone,
The latest recipe for my collection is one I found on YouTube. It's Swiss Steak cooked in the Crock-Pot. Mom and I will be making it on Tuesday for supper. Until I had watched the video, I never knew tomato paste was sold in a tube! There is garlic in the recipe, but mom doesn't care for too much garlic, so we'll leave it out. The steaks are coated with flour seasoned with salt, pepper, garlic and onion powder before they're browned in the skillet anyways. This recipe looks very yummy and I cannot wait to try it! If this is a hit, I have found another way to use cube steak besides chicken/country fried steak. Anyone want the recipe? Brad AKA Moonwolf |

| Cubed steak is good in any steak soup recipe for the crock pot. You just cut the cubed steak into 1" cubes. You could also make crock pot Pepper Steak by cutting the cubed steak into strips about 1/2-in. by 2-in. Teresa |

| Yes Moonwolf, please post the recipe. The autumn of the year is soon to be upon us, and that sounds like something I might want to throw together for a Saturday night dinner, (after a busy afternoon of raking leaves). Be sure to include the cut of meat that you used, if other than chuck steak. I get on a crock pot binge every once in a while, but after a few meals of it the crock pot goes back into the closet. I'm hoping your recipe doesn't include any 'cream of' soups, or I'll hide in the closet, with my crock pot. |

| Brad, I'd encourage you to put in a small amount of garlic anyway. It will add a little more depth of flavor, yet won't be garlicky. But just a little bit. Now for me, I'd triple the amount of garlic in almost any recipe. ;-) |

| Brad, one way to get the depth of flavor garlic adds without a sharp "bite" is to toss a whole, peeled clove into whatever you're cooking, in this case Swiss Steak. Then when you're ready to eat you can remove the whole clove intact. Another way to get good rich garlic flavor but mellow it out immensely is to roast it first before using in a recipe. Just cut the top off a head of garlic, drizzle with a touch of olive oil, wrap the head in some foil, and roast at 375-400 degrees for about 30-45 minutes. It will soften during roasting and when done and cool - you can just push the cloves out of the paper skins - no need to peel or chop. The smaller the garlic is chopped/minced the stronger the taste because there are more exposed cut sides. I'm not suggesting you cook with an ingredient your Mom really dislikes but just suggesting a way to get the garlic's benefit without the negatives that some people associate with garlic. /tricia |

| Teresa, thanks for that tip! The lady in the video said her mother used to make Pepper Steaks in the crock pot too. I've never had Pepper Steaks, but they sound good. lbpod, I shall post the recipe for you :-) and no fears because this Swiss Steak recipe doesn't use any "cream of" soups. Sushipup, I'll try and talk mom into it, but she's the type that's not easily convinced. On to the recipe! Swiss Steak 2 1/2 pounds cube steak Coat steaks in flour that has been seasoned with a little salt, pepper, garlic powder, and onion powder. Brown in skillet in hot oil. Place steaks in crock pot. In same skillet, saute onion and celery, until brown. Stir in garlic, then add oregano, paprika and tomato paste. Stir once more. Add veggie/spice mix to crock pot, along with tomatoes. In tomato can, combine onion soup mix with hot water and give it a quick stir. Pour over contents of crock pot. Add ketchup, Worcestershire sauce, and 1/2 tomato can full of water. Stir all ingredients once more. Cover and cook on high for four hours. Eat with mashed potatoes or rice. Enjoy!!! We'll be eating it with (instant)mashed potatoes and (store-bought canned)seasoned green beans :-). Hope you enjoy the recipe! Brad AKA Moonwolf |

| I love a good Swiss Steak and I think the suggestion of adding the whole clove of garlic and removing it is a good one. Here is another variation if you want to try one without the dry onion soup mix.... Hope you and your mom enjoy it! Alexa Swiss Steak Recipe courtesy Paula Deen Ingredients Directions Cut steak into serving-size pieces. Season, to taste, with garlic powder and salt and pepper. Dust meat with flour. In heavy skillet, brown both sides of meat in vegetable oil. Transfer to Dutch oven. Combine garlic, tomatoes, onion, bell pepper, and 1 tomato-can measure of water. Pour over steak and simmer over low heat until meat is tender, about 1 1/2 hours adding water, if necessary to keep meat partially covered. Season, to taste, with additional salt and pepper. Hint: Cook this in a slow-cooker, according to manufacturers instructions, on low for a most fabulous dinner. Low heat on a slow cooker is about 200 degrees F and high heat on a slow cooker is about 300 degrees F. Note: to ensure tenderness, it is necessary to have the butcher run the round steak through a cuber. |

| Looks wonderful brad....I missed this yesterday and it scrolled off the page so fast. I don't use the crock pot but rather a Dutch oven....and now I am hungry for Swiss steak. Was interested to see that your mom liked the sauce on her potatoes, but you didn't...LOL! I like the sauce/gravy ON my potatoes. |

| lbpod, Actually we did have a vegetable to go with this but I forgot to include a picture of it: seasoned green beans (store bought canned). They're one of my favorite veggies to eat :). Linda C, LOL there was so much sauce on my steak that whatever didn't stay on it, I stirred into my potatoes :). I ate it by taking a piece of steak with some mashed potatoes....mmmmm..... Alexa, oh this recipe is a definite keeper! The only downside is that it makes a LOT of sauce. Mom used it (with some leftover steak) to pour over noodles for herself for a meal. Brad AKA Moonwolf |

| Oh yeah, that looks great. A nice dinner roll or some toast with it and I'd be very happy! I was looking at some swiss steak recipes a while ago, and looking for something simple and tasty. Just out of curiosity, how do you season your green beans? |

| Hi cynic, The green beans are already seasoned when you buy them in a can. They're Del Monte brand and they are seasoned with onions, red peppers, and garlic :). Mom just heats them up in the microwave. I do add some crushed red pepper flakes to mine when I eat them. Brad AKA Moonwolf |
