For the bread bakers....

For my birthday I got a Danish dough hook because some of you have it and love it. I also got a small kitchen scale that weighs up to 11 lb, plenty of weight for me, and a double potato masher.

I'm making bread today and I weighed the flour. I've read that 1 cup is 4 oz. My recipe calls for 5 cups, but 20 oz of flour was only 4 cups. I had to add more flour as it was too wet, but that doesn't concern me in the least. Plus it's very, very humid today and bread-making is not an exact science. :)

Does anyone make bread by weight? I'm going to use the scale when I make buns to weigh each knob of dough so they are somewhat similar in size. My buns vary from dinner to burger size all in the same batch.

Regarding the dough hook, I'm not exactly sure what the advantage is over a whisk then a wooden spoon. Except one tool to wash, and it's easier to wash than a whisk. It's supposed to have easier mixing, but it was heavy going. How do you like it? I think Annie and Plllog both use one. :)
