My oldest son deep fries our turkeys, and they are wonderful and juicy. Payback for some of the trouble he gave us when we were young. LOL He injects garlic and other "STUFF" inside and makes the meat delicious ! However between my younger son and I, if you want any of the really crispy skin, you better be really quick . Maybe this comes under too much information? I always seem to cause trouble when I post.
I deep fry turkeys all the time...the best way to eat them, I think. Never would have believed it until I tasted it, then started doing it. I use Emeril's recipe; have tried many others, but none compared, so I quit searching. I halve the cajun spices because we don't like it too spicy. I've never found the Zatarian's, so I just put some Old Bay in the mix. And I've had to fry in different types of oil because of different guests' peanut allergies, but peanut oil is heads above the others for great results.
