grinding own... meat??

Sister gifted me a mess-o Kitchenaid attachments. She bought a pasta roller thing (which she LOVES, and didn't gift!?!), meat grinder, pasta extruder, and some kinda juicer gizmo. Said they all work FINE; she just wasn't in LOVE with them. Said play around with them... keep or donate later.

Want to try my hand at grinding beef for burgers in hopes of making the "perfect" one?? What cut(s) of beef should I try? Grinder has coarse and fine dies/blades. Should I grind coarse THEN fine? Have seen/read that cubes of beef should be semi frozen to aid in grinding? Any seasoning... pre-grind?
