Viking Series 7 vs. Blue Star

Help! I cannot make a decision!

I am doing a complete kitchen renovation and need to make a choice for a 36" commercial/professional stainless range/oven.

I am a passionate cook who only uses the oven for a few major holidays per year (think Thanksgiving) when I have 15-20 people over. I am torn between the new Viking 7 Series and a Blue Star. The chef in me says get the Blue Star with its larger capacity oven and "workhorse" reputation. However, I am concerned with the heat emanating from the door and the temperature of the door itself since I the oven will be in a enclosed space and we usually have small children milling about.

The Viking 7 series seems promising with the 6 year warranty. With its more powerful burners, and a new manufacturer, it seems like a promising contender.

I have to purchase a new dishwasher, fridge, and hood, and the price of the Viking is about $2,000 more than the Blue Star package.

I plan to stay in my house another 15-20 years, so resale value is not my highest priority. Nor is the "impressing my neighbor" factor.

Any other suggestions for additional brands? Is there anything that I should be aware of?

I have been reading all the Garden Web blogs, which has touched on this topic, but mostly focused on the Viking 3 and 5 series. Thank you!

I don't understand. You mean you've been to the Appliances Forum? If you've checked there lately, you'll see that they will strongly warn you away from any Viking product. Their current service record is dismal and there are many many complaints about issues across their whole line requiring service, replacement and repair.

There have been some issues with some BlueStars, but in general the company does seem to respond sufficiently. Most people love them.

If I were you, I'd stick some ribbed silicone on the door to protect the kids, and get the BlueStar (though I think they're supposed to have fixed that issue, at least somewhat).

If safety is a tip top priority, and you can put in an adequate electric service, get induction and a separate, electric oven (can usually be mounted below the cooktop if it's the same maker). If you want the look of a range, you can have the cabinet they go in made to have a range look.

If you want to be a guinea pig for Viking, go ahead. You might get one that doesn't have problems and works right. It seems a shame to spend more money on such a risky prospect. Oh, and Viking dishwashers don't dry.

I've had a Capital Culinarian for a couple of years and love it. I got the 48" model (configuration is 6 burners and a grill), one small oven, one large oven with rotisserie. In general I am very pleased with it. If I were to do it over, though, here's what I'd do:

1.0 Forget the rotisserie. Yeah, it's cool to watch, but you have to clean the oven more frequently and now that there's a Sam's near me selling rotisserie chickens, it's hard to justify mucking up the oven.

2.0 Get a griddle instead of a grill. The Culinarian grill doesn't get as hot as my gas grill on the porch, and it's a PITA to clean.

3.0 My kitchen layout pretty much demanded a range, but if I had to do it over again and could fit it in this way, I'd get a couple of good wall ovens and a Culinarian cook top. Love the 23K BTU burners.

5-Star is the company which made Viking. Five Star, built by the Brown Stove Co., is a new improved version of the original Viking line. Brown produced the Viking line for several years and when their relationship ended, Brown Stove introduced the Five Star into the market. I have read many reviews regarding the new Viking line as being as crap. I was also told by a high end appliance store that 5-star wasn't very good quality, but he also said that Viking wasn't quality and that I should go with a GE or DCS. Since I don't want stainless (gasp! imagine!) I don't have alot of choices. Lacanche my first choice is pretty much out of my range price-wise. Viking offers colors, but they are crap now - then I'm left with 5-star. American Range as mentioned above is only gas and I want dual fuel. I think I am going with the 5-star!

My wife and I have been reading and visiting dealers for both the CC and BS for some time. We finally decided we wanted a 48" rangetop with 24" grill. Here's what key things we found (of course our opinion): 1. Appearance: CC has a really nice high-end residential finish BS has more of a commercial heavy appearance 2. Burners: CC: has open burners and all are the same size and big (23k) BS: has open burners with 3 different sizes standard (2-22k, 1-15k, and 1 simmer). BS also allows for custom burner sizes and locations (at a cost) 3. Grates: CC: one piece cast iron per burner (wok will need a wok ring) BS: 2 piece cast iron per burner (no wok ring needed - remove the inner grate) 4. Burner Cleaning: (both have drawers at the bottom of rangetop to collect spills) CC: also has stainless shields under grates to prevent spills from dropping down into rangetop (if spills drop past shields - all 4 grates may need to be removed to clean) BS: remove a single grate to access spills that drop into the rangetop 5. Grill: CC: 30k with ceramic rods over burners cased in stainless and has cast iron grates BS: 30k with stainless shields over burners and cast iron grates 6. Costs: Similar 7. Service & Support Neither has an authorized dealer close by where we need it installed. (However our local BS dealer put in writing they would support it even if they needed to drive the long distance) 8. History (this may not be exact but how it appears based on all the research) CC: some people have issues with simmer (adjustments may fix this) - others have stated they need a smaller burner BS: Garland is a long time commercial range and they sold the residential part which is now BlueStar. A few years back, BS seemed to have some quality and support issues, especially with the ovens. It seems these issues may have been corrected. 9. Reliability Overall both seem to be good. So what did we do and why: We purchased the BS 48". The key determining factors for us were the burner sizes, grill design, and support. We really liked having different size burners since we have a variety of items we cook, especially the small burner for lots of delicate simmers. The CC burners may be fine for simmer but with this amount of money, it was just too much of a gamble for us - especially since BS had a variety of burner sizes. Also, when I look into our outdoor Weber grill, which really does a good job, it has shields over the burners similar to BS instead of ceramic rods. Maybe others have rods or the rods may even be better - I don't really know but liked the similarity of the BS to the Weber. Conclusion: Both CC or BS would probably been fine for us. The CC looked better but we liked BS having variable size burners, a grill setup similar to our outdoor Weber grill, and the support our local BS dealer offered. We ordered the BS a couple weeks ago and 11 days later it arrived. Hope to have it operational in about a month. Maybe I'll post details and pics later.

Induction would be your fastest boil most likely but there are other pros and cons to it. The term “open burners” has been used in an ambiguous way by manufacturers. It has to do with the burner tray. Before the mid 1980s all burners were open. A sealed tray was developed to keep food from getting down in the works of the stove. All three manufacturers you listed make a version of “open burners“. Some manufacturers say the open burner gets more oxygen, generating more heat. Nope. The oxygen is mixed in the Venturi tube. Open vs sealed is a cleaning preference. Viking d-5 open burner, gap between tray and burner cap This is their oldLet burner but you can see the gap better than the drawing. BlueStar open burner Open around the star American Performer is really a semi open burner in that the tray is all one piece and lifts off. It does still have a pull out tray below. BTUs are the amount of heat given off by the burner, but it also matters how much of the heat gets to your food. This is dependent on the burner configuration, the materials the cookware is made of, the size and shape of the pan and even what you are heating. The d-5 “open burner“ and the BlueStar sealed burner would probably be very close in function. They both have burner caps. This one thing can affect performance more than anything. This can cause the burner to flare on highest heat. The amount of flare varies a lot manufacturer to manufacturer. It all depends on how it is engineered. The AP star burner and BS star burner are uncapped so the flame goes more in a straight up direction. You really have to see the flame in action to see how much flare the BS sealed burner has vs the BS Star And see how it works with your pans. If you have wide pans, you will capture more than with 6” sauce pans, but the number of people using sauce pans on highest heat is probably small. You didn‘t mention anything other than boiling water but the importance of the star vs ring burner also depends on what type of cookware you have and what type of cooking you do.

Jas3150- it’s a 60” hood. We got the range and hood together, it was a floor model deal and it was the last bit of Viking this store was carrying so we got everything deeply discounted (and we talked them down more...) All that to say, we didn’t get a choice on the hood size, like if we wanted to go bigger. This sucker cranks! I’m sure a little bigger than the range would’ve been nice, but I’ve really not had much of any problem with grease going off to the side, and I do a lot of high heat Asian-style cooking where I turn the thing all the way up. It’s loud, but I don’t care, it does the job, and it does it well and that’s all I want from it. So no, I don’t have any regrets on the hood size. It has a baffle system to collect the grease, and that’s the only kind of system I was interested in considering the kind of cooking I do so frequently. Nevertheless, I would not have turned down a hood that was larger than my range if it had been an option with what we were buying. We have just sold this house (we close in just over a week) and we will be building a home on a plot of land we already own. We have just become empty nesters (all 5 of our young adult children moved out this year! They were all close in age) and we are downsizing big time. I’m planning out my next kitchen already, and I will be going with a smaller cooktop (BlueStar this time because I want the wok cooking features it has that I can’t get with other brands) so I’m only going with a 36” cooktop, I do plan to go with a larger hood this time because with the BlueStar I will have more BTU’s than I’ve ever had before, and because it’s only a 36” and I think it will just look better to have a larger hood than that. Ventilation is pretty important to me, LOL!

After my experience with a Viking gas range, I would never own another Viking appliance. Both oven burners and ignitors had to be replaced "twice" in less than five years. Something wrong with having to put $800.00 out in service and repairs within a five year period.

Based on what you posted above, apparently they have improved on their warranty. Still wouldn't tempt me to buy another Viking.

I was at a Viking showroom sometime ago.

I asked the salesman, " How durable are these appliances?"

Replied, "They last forever, because people who can afford them do not cook with them."

I purchased my Viking cook top, oven and microwave nine years ago.

The cook top lettering decals came off twice in about the first 18 months and the whole cook top needed to be replaced each time. Whole decals literally came off on my hand as I was cleaning it. A Google search showed that several other people had the same issue. I was told that I needed to be careful and not to use any stainless steel cleaners, etc. when cleaning the appliances. Since then I use nothing but a damp cloth and when grease is an issue I add a tiny bit of dish soap. After the last replacement the number decals have remained on the cook top. I do like the way the cook top functions.

The oven had problems right out of the gate and needed tweaking and then replacement. I was very careful while cleaning my oven so by the time the oven numbers started to come off it was too late to be covered by warranty. I inquired about purchasing new decals from Viking and was informed that wasn't an option. While some of the markings remain, others are made with a Sharpee. Very high-end and precise, don't you think? The oven tends to run hot so I need to keep an oven thermometer handy.

So far the microwave has been fine (although my old GE did a much better job with popcorn) but this last week the door has been balking when I try to open it. We'll see what happens next.

While Viking covered the cost of the replacements during the warranty phase, we had to pay the cost of labor. That was not an inconsequential expense. The second repair guy messed up the retractable vent behind the cook top and the oven guy messed up the protective metal cabinet shield that my contractor installed on my cabinets. I must say the appliances work well but I won't be buying Viking when I need to replace them.
