Kitchen design question for bakers

I am an aspiring baker and am thinking to have a dedicated baking center in the kitchen we are building. Some questions for bakers among you.

1) Would you use something like this to store flour and other baking supplies (the top squares are scoops and the bottom are bottles)- See link below

2) Do you like marble as a baking prep surface. Any recommendations on type of marble? I am worried about chips and cracks as it may make it hard to roll out pastry.

3) What would be the ideal size of the baking counter. I am thinking 30" deep, 36" wide and somewhat lower.

I am more active in the kitchen and appliances forum as we are doing a remodel but in designing the kitchen, I thought I would check with the experts here. Hope you will chime in. Thanks much!
